Swiss meringue buttercream half batch recipe for anyone who wants a smooth, silky and stable buttercream without making a full batch. This is the buttercream I use most often for filling cakes and for achieving clean, sharp finishes. It’s less sweet than American buttercream, very forgiving to work with, and perfect for wedding cakes and celebration cakes.

In this video I’m showing my half batch Swiss meringue buttercream recipe and answering the most common questions I get, including egg whites, butter choice, temperature, consistency, storage, piping, and how to fix it if it splits or turns soupy. I also explain why heating the egg whites matters, how to tell when the meringue is ready without a thermometer, and how to get that silky texture by removing air bubbles.
