Oh hello … a cosy UK winter retreat did you say?

Yes indeed - this restorative winter retreat located right on the beach in West Wittering is an invitation to slow down, let go and embrace all things hygge - which is a concept I love 🧡

This is a collaboration with Nicky and .bakery - yes she’s so talented she has 2 Instagram accounts - rightly so ✨

During our 2 night stay we’ll enjoy baking sourdough; bracing beach walks; a candle making workshop; gentle yoga; fire side chats; delicious vegan food and girlie time in the sauna and hot tub. A 1 day option is also bookable for Sat 17th Jan too - only 1.5 hour drive from London.

If you’re looking to achieve the elusive ‘ear’, here’s my 5 top tips:

🌿 Make sure your starter is nice and bubbly before creating your levain. This is the most crucial part, a less than lively starter won’t create a great levain. Less bubbles less oven spring.

🌿 Stop bulk fermentation once your dough has doubled in size, too early and it’ll be underproved and too late it’ll have no oomph left to rise.

🌿 Shape well to create great surface tension.

🌿 Score the dough with one long slash at a low angle.

🌿 Spray the oven with water to create steam or put a roasting tin with boiling water in the base of your oven for HALF the baking time. Remove after the first 12 minutes.

Throwback to the last Artisan Breads class I ran pre-Covid. I can’t tell you how good our house used to smell after a baking class!

The focaccia we made is based on a recipe taught to me by when I attended a microbakery course . A week long course, it made me the baker I am today. So insightful, and the recipes we learnt to make for our bakeries were something else.
