I survived my first year of Patisserie and Confectionery! 😅🎂 There was definitely more flour on my apron than I care to admit, lots of sugar, and so many great bakes. I'm ready for a break now, but I'm really excited to see what September throws at us for Year 2. 👨‍🍳👩‍🍳

A busy but incredibly rewarding week in the pastry kitchen at Sheffield College! 🍰✨

I had the chance to dive deep into the heritage of European baking, perfecting 8 distinct classic cakes.
Each one requires a different set of skills—from delicate sponge work to precise mousse layering and chocolate tempering. Here is the full lineup from last week:

• 🍎 Linzer Tort – Mastering the buttery, spiced shortcrust and the iconic lattice design.
• 🍯 Doboș – The famous Hungarian multi-layer cake with its signature caramel finish.
• 🇨🇭 Zuger Kirschtorte – A Swiss masterpiece: layers of nut meringue and sponge soaked in Kirsch.
• 🍒 Black Forest Gateau – The German classic, balancing rich chocolate, whipped cream, and tart cherries.
• 🍓 Fraisier – A celebration of fresh strawberries and smooth crème mousseline.
• 🍫 Délice au Chocolat – Pure elegance with a focus on velvety chocolate texture.

A whirlwind of sugar, citrus, and hard work at The Sheffield College! 🍰✨

The past few weeks have been a beautiful (and very busy!) blur in the kitchen. Between pushing myself through my latest assessments at college and prepping for an exhibition, my hands haven’t stopped moving.
