After 5 years of being a self-taught baker/cake decorator, this is the one technique that has made the most difference to the finish on my cakes…

Use a blow torch (if you have one!) or a tray of boiling water to heat the edge of your metal scraper before your last couple of passes on your cake.

If you’re using boiling water, remember to dry the scraper before using it on the cake.

The heat will melt away any imperfections or air bubbles and give you that lovelyyy smoooooth finish.

The secret ingredient that will deepen and enhance the flavour of your chocolate cakes?

It’s coffee - add a dash of espresso/ espresso powder to your chocolate cakes, along with good quality, high percentage cocoa powder and thank me later!

Now I’m off to make some dark choc espresso brownies because all this coffee chat has put it into my head ☕️🍫
