Transferring the dough to an oiled container and letting the time do the development on the dough saves me going back to the dough over and over

Also, adding salt with the flour while dry is a game changer.

My customers keep asking for this cranberry and walnut sourdough, so here’s what goes into one loaf 🍞

Ingredients
450g strong white bread flour
50g wholemeal flour
50g active sourdough starter (fed 12 hours before mixing)10%
365g water
10g salt
100g walnuts
100g cranberries
½ tsp cinnamon

I mix the dough, add the cranberries and walnuts, then give it stretch and folds before shaping, scoring and baking. The finished loaf has a little sweetness from the cranberries and plenty of walnut in every slice.
