When my stunning niece and now nephew in law asked me to make an intricately piped wedding cake for what I can only describe as the best wedding I’ve ever been to! I may of internally panicked. However I accepted the challenge. I baked through the heatwave working in the coolest parts of the day and transported it across the country without a single repair being required (the stress was worse than baking in my kitchen that’s been lovingly renamed as the inferno) all the cakes were baked with non gluten containing ingredients, alongside the main lemon cake there was a chocolate fudge, dairy free lemon, courgette and lemon vegan cake (my new favourite), vanilla with strawberry conserve and a small version of the wedding cake specially presented by the bride and groom to a family member who’s birthday just so happened to coincide with the day. I have it on good authority being presented the cake was the best part of her day making it a birthday she’ll never forget! Finally a massive Congratulations to the happy couple and thank you for entrusting me to make such a special cake
