First bake for a while due to health and lack of free time. Mary Berry's banana & honey and tea loaf currently baking away. The recipe calls for freshly ground nutmeg so I used my grating bowl with it's handy little pastry brush to get the nutmeg out. Kitchen is smelling amazing right now!

Are you a cream on top or jam on top? This evening I've topped mine with a dollop of bonne maman berries and cherries jam 😋

These scones were also served up yesterday along with the pavlova.
What a treat to have whilst watching the monaco grand prix!

First attempt at a pavlova today & it was pretty perfect if I do say so myself!
I've only made Meringue a couple of times (for Swiss Meringue buttercream and macarons).
Had just the right amount of gooey texture in the middle with the crispy outside.
Topped with freshly whipped cream and summer berries.
Went down a treat!

Whipped up a quick batch of scones ready for when my wonderful mother in law popped up to visit me and the kids today.
Served up with clotted cream and strawberry jam.
I had mine the Devon way whilst she went with the cornish method.
How do you have yours? If I'm having clotted cream like today it's the Devon way, if I'm having whipped cream it'll be jam first!

Realised I never shared Finley's birthday cake with you all last month.
Paw patrol themed, chocolate cake filled with chocolate ganache and Raspberry jam.
He was so happy with it and was very excited about blowing the candles out.
Unfortunately due to my husband catching COVID-19 a couple of days before we didn't get to celebrate with family as planned.
The cake was enjoyed and because my husband had thankfully been nowhere near it I was able to hand most of it over to Finley's nursery to share amongst the other children and staff.

What's that? Creme egg Brownies fresh from the oven? Yep, gooey & fudgey and oh so tasty! Once these have cooled enough ...

Yep, gooey & fudgey and oh so tasty!
Once these have cooled enough I'll be popping them in the fridge to set.
Doing this makes a huge difference to them as it keeps them fudgey but also firms them up to hold shape.
I'll slice them up this evening ready for taking to work tomorrow.
Also planning on making raspberry Flapjacks later and maybe blondies too if I've the time!

First bake off 2022 today, egg free banana loaf. Plenty of bananas to use up and not enough eggs so used oil instead.
Moist and moreish, perfect with a cuppa!
Went down well with the children too with Finley bringing me his empty bowl and saying 'more'

3 Christmas cakes covered with marzipan, waiting for them to dry out before the icing goes on, eggnog cupcakes baked and first batch of mince pie cupcakes baked, there was enough mixture for another 6 cakes which are currently baking now.
Just need to whip up the brandy buttercream later to top all the cupcakes with.
Also got 2 lemon drizzle load cakes to bake Tuesday along with Brownies & if I can fit them in I'll bake some Christmas biscuits.
Last week I also did my cranberry, orange and port sauce ready for gifting and one for our table.

I know I've been quiet here but life has been hectic with work, poorly children and trying to fit in seeing people ahead of Christmas.

I'm also planning to step away from being a business during next year.
It's not totally goodbye, but with full time work & 2 small children plus my chronic illnesses in just not finding it possible to fit in a small business too. For now it'll all be baking for my family and friends as gifts.
One day I hope to bring back Watts Baking as a business, but I'll share my creations with you still where I can.

Meet my marshmallow monsters!

I had leftover melted marshmallows from wrapping the Halloween cake so I piped it onto baking parchment then added sprinkles and eyes & dusted with icing sugar.

They look so fun! Was a moment of inspiration and I'm glad I went with it as they've turned out great.

We're heading to a Halloween party later this morning so will take those with us along with the rest of the cake, not that there's much left! 🙈🙊😂

My Halloween cake is finished!

Been a bit of a baking mission today! Phew!

Cakes baked on Tuesday, along with the pumpkin pies, then due to having choir last night it was a case of assembling, ganache, buttercream & decorate today after I got back from work at lunch time.

Along side this I've also made Millionaires Shortbread and chocolate Brownies for an order from a colleague of my husband so he's taking them tomorrow when he's back on shift.

I'm cream crackered!
