Always good tips......
I made this sourdough starter in TWO DAYS.

Fact is, if you mix flour (in my case RYE) and water it WILL ferment. It just will. So long as it’s warm enough (around 23c here at the moment).
Once you know the principles and understand what you are doing and WHY, sourdough is a breeze. I promise. Sure it’ll take some practice but hey, doesn’t EVERYTHING?
