☀️ Lemon Cheesecake Bars 🍋

The perfect easy summer bake using our Cornish Shortbread with Sicilian Lemon 🍪

You’ll need:

• 1 pack Cornish Shortbread with Sicilian Lemon
• 80g melted butter
• 300g cream cheese
• 200ml double cream
• 2 tbsp icing sugar
• Zest of 1 lemon

Method:

Crush the biscuits and mix with melted butter. Press into a lined tray or dish and chill.

Whip together the cream cheese, double cream, icing sugar and lemon zest, then spread over the biscuit base. Chill for 2–3 hours before slicing and serving.

Sweet, creamy and perfect with an afternoon cuppa in the sunshine ☀️
