Gluten free vanilla cake/Victoria sponge, my hubby is coeliac, we can all enjoy a slice together, im adding raspberry jam and fresh whipped double cream
Recipe
225g baking spread
225g granulated sugar
225g gluten free flour (I use Doves farm)
A quarter t spoon of xantham gum
1 tsp of baking powder
1 tsp vanilla extract
4 medium eggs
Method
All ingredients in the mixing bowl together, mix until just combined
Pour mix into 2 greased and lined cake tins bake on 150 electric fan oven for 35-40 minutes
