Really enjoyed making this carved Studio Ghibli cake of ‘Totoro’ for my own offspring’s 21st birthday.

It’s 6 layers of moist chocolate fudge cake sandwiched with a creamy Nutella buttercream and dark chocolate ganache and covered/sculpted in an untraditional marzipan as they hate fondant icing.

It’s that time of year again - I’ll have a very limited amount of these available to order for collection from the 19th December.

As usual - soaked and fed a stupid amount of spiced rum with my own blend of fruits and nuts in the mix. Then topped with a generous layer of marzipan and chocolate and finished with a dusting of icing sugar and edible holly leaves.

These are priced at £22.95 and can be posted around the UK only for an extra £5.

Congratulations to the lovely couple who ordered this wedding cake - it was an absolute terrifying pleasure to make.

A 12”round Cointreau fed fruitcake and an 8” double depth vanilla Madeira sponge layered with raspberry conserve and vanilla bean buttercream. Both are covered in golden marzipan and royal icing - decorations were provided.

It’s been a busy week with not one but two very important cakes.

First up was a chocolate truffle torte which travelled by special delivery to my daughter at uni for their 20th birthday.

Then the second was a massive carrot cake for a very special 70th birthday which travelled all the way up to Woking.
