Ingredients: π₯£
100g caster sugar
100g light brown sugar
120g hard margarine
1 large egg
1/2 tsp vanilla extract
260g gluten free plain flour
30g cocoa powder
1/2 tsp salt
1/2 tsp bicarbonate of soda
160g chocolate chips or chunks (a mixture of white chocolate and milk chocolate, 80g of each)
Method: πͺ
1. In a large mixing bowl, mix together with a wooden spoon both your light brown sugar and caster sugar with your melted margarine. Mix until it all comes together and is fully combined.
2. Add your egg and vanilla extract to the bowl and continue to mix until combined once more.
3. In a separate bowl, sieve in your gluten free flour, bicarbonate of soda, salt and cocoa powder then briefly mix.
4. Add your flour mix to your original bowl and mix until combined. Make sure your mixing bowl is big as this is quite a lot of flour. It can be hard work and takes time to properly combine it all but it will form a perfect cookie dough.
5. Add the chocolate chips and give them a good mix in so they are dispersed evenly.
6. Cover your mixing bowl with cling film and chill in the fridge for about 45 minutes. (after the 45 minutes you can make the cookie dough up into balls and place them in the freezer and take them out when you want a tasty treat as well)
7. Heat your oven to 170C/ gas mark 3 and prepare a couple of baking trays with good quality, non-stick baking paper.
8. Remove your cookie dough from the fridge and roll your dough into balls and place them on your trays. We have found that weighing them to between 50-60g gives you a good size cookie. The cookies will spread so leave some gaps between them, you will need between 2-3 trays for a mixture this size.
9. Pop the trays into the preheated oven for 15 minutes or until they have firmed up a bit on the top - they should have flattened out to look more like cookies.
10. Remove from the oven and leave to cool on the baking tray before moving them. They'll be very soft at first so allow to cool.
