2024 was when I really got to explore my creative side with baking and where I really started taking it seriously!
I didn’t just want to do the odd cupcake here and there I really wanted to see what I was capable of and I found out with a bit of confidence and the ability to accept when things do go wrong I was able to make things I could only dream of 🍮🧁
2024 is when I started my newest job an opportunity that at first was quite daunting but it’s the best decision I’ve made and I get to make such elegant and beautiful sweet treats for people to enjoy 😍
2025 is going to be such a full year and I’m so excited to progress even more than I could ever dream of! 📈

HAPPY NEW YEAR! 🥳 I know i know I’m late to the party and it’s a week into 2025 but hey I’m a chaotic baker for a reason 🔥 Now I disappeared from the page last year and that was my bad 😅 but! 2025 is exciting and new so let’s get some new content on this page! Well well well so my posting plan went out the window and September has almost passed. This month has been so busy I’ve forgotten what date it is BUT I promise I’ve not forgotten this page. I’m still baking away and creating that chaotic treats that I get to share with you all! 🔥
So back to the bakes i managed to get these 4 massive but delicious focaccias done! We all know how much I love sharing my breads on here and when I get a chance to make them I take it and run! 🏃🏻‍♀️🍞
These turned out so amazing with salt and rosemary, it’s just a classic you can’t pass up.
For these we used them for some lovely charcuterie boards which is such a great way to to elevate any cheeseboard 🧀

Time for my traybake brownie to get an upgrade!
Special occasions call for fancy attire and this brownie needed to sparkle like a Bridgerton diamond of the season 💎🤩
We’ve got my classic triple chocolate brownie with its chocolate ganache but to spice things up I’ve also made homemade honeycomb 🐝 and a fruit chocolate bark which I had a lot of fun smashing up 🔨 to finish the plate off there’s also a rocher of vanilla ice cream🍦
I’m unbelievably happy with how this plate came out and how far from traybake to fine dine dessert it’s become!

Don’t worry I won’t fill this post with too many cheesy words…. BUT take a look at this fruity delight! 🍓
Whipping up this cheesecake was actually a lot of fun and I think creatively it’s started to get me thinking about how to really elevate the desserts I make!

Honey, I made honeycomb! 🐝
This is something I’ve been meaning to make for a while and finally got round to it!
This is childhood right here and not because I ate it but my mum would tuck into this while I had a puzzled look of confusion at this super hard sweet that stuck to your teeth! 🤪 I just couldn’t wrap my head around this being nice and I won’t lie I was still apprehensive when tasting this.
If you don’t know how honeycomb is made well I’ve got you covered, heat up some sugar and syrup then add bicarb and watch it puff up like crazy! Just be sure your pan is big enough or you’ll be having a bad time cleaning up 🧼

It’s time to refill the cookie jar! 🍪
Although I feel as I’m writing this post that the jar may already be empty again…

Today we’ve gone with the classic chocolate chip cookie, with a little dark chocolate thrown in 🍫

Homemade cookies are the best and these ones are the perfect version of cookies I like ❤️
For me cookies need to be soft but not too soft that they crumble when you pick them up. These however are just soft enough to the point where they still hold their shape!

So my goal this year was to get myself to the gym and get into my fitness era cause all this baking is heavy lifting stuff and my muscles are non existent so yes it’s august but hey I’m at the gym and I’m more than ready to punch out some tasty treats 💪🏻
As I write this I’m currently 13 mins on the treadmill and I’m thinking this is nuts why am I doing this but I suppose it’s not as nutty as the BAKEWELL SLICE 🍰 (I will leave the bad jokes at the gym from now on)
Now I don’t eat a lot of my baking just taste testing but when I make this traybake the temptation is too much to resist! 🤤
Sweet crispy pastry layered with gooey raspberry jam, nutty almond frangipane and topped with toasted almonds, dried raspberries and drizzled with white chocolate 😍

Focaccia attempt No.2!
If you saw my last attempt then you’ll know that I was heading in the direction of making focaccia cakes by accident, I’m happy to announce that this one went on quite the diet and turned out a reasonable size 😂
Now some points I’ve learnt from this attempt is that size does matter 👀 before I was using a tin that was way too small but with this wider tin I was able to get that desired flatter loaf.
Unfortunately my rosemary didn’t stick around long enough for this loaf but a little salt and pepper isn’t so bad 🧂
Since I’ve managed to crack the size and shape issue I can now experiment with flavours and ooo I’ve got some goodies in mind 🍞

There comes a point when you look at your flour dusted, cake splattered recipe book and think “Really should clean that up at some point” and sure enough today is the day!
So it’s off with the bakers whites and on with the pen and highlighters, time for a recipe book scrub up 🧼🖊️
I do call myself a chaotic baker for a reason and that reason being I am terrible at organising (sometimes!) but this week is definitely a good time to do it and I’m determined to at least get a page done… ok I’ll get it all done but I will whine about hand cramps later 👋🏻

Last week my partner and I went away to Glasgow and although the weather was typically Scottish it was an amazing time as always! Plus these superfood pancakes from stack and still are always top notch and a perfect start to the morning 😍
Returning back home though we’ve both gotten the lovely travel bug and are hibernating in bed! 🤒 I’m going to try my best to get some baking done but for now I will just have to be content with the memory of these delicious pancakes 🥞
