I had my EHO visit (environmental health inspection) a few weeks back and I wanted to share my experience of getting 5 stars
We talked
1. Education and training
- I am L2 food safety and hygiene certified
- I did extra allergen training via food.gov.uk
2. Storage and labelling
- I store dry ingredients in clip top containers, clearly labelled with expiry dates & allergens
- I have a temperature gauge in the fridge
3. Allergens
- I have a matrix with allergens listed for every product & variation ie different flavours
- ANY allergies are discussed pre-purchase, and allergen info is listed online and confirmed specifically when ordering
- My box insert details all allergen info too (swipe β©). Shoutout to for the inspo, the checkboxes make it super clear
I also showed records of open and close checks, a deep cleaning schedule and a risk assessment. Templates/examples can be found on food.gov.uk and in the safer food better business pack
All in all it was a pleasant visit, confirming I run my kitchen to a very good standard and giving me (and my customers) that extra assurance that when I'm baking I know what I'm doing
