Make a basic sponge with me
1. Cream butter/spread & sugar
2. Add eggs and mix
3. Fold in self raising flour
Add wet flavouring (extracts) when you add eggs
Add dry flavouring (choc chips, nuts) once flour is incorporated
I use a 2:1 ratio for ingredients. So for every 1 medium egg it's 2 ounces of butter, sugar, flour - yes I measure in ounces!!
For buttercream I find half butter to icing sugar works the best (flavour & texture wise) so 50g butter to 100g icing sugar - yes I do buttercream in grams...sue me πŸ˜‚
There are fancier recipes out there, but this has never failed me and it's super easy to remember!

Do you ever randomly think about where things come from? Like when, how, why the first of something was created...or is that just me?
I've been baking forever for fun, more recently for business, and it still blows my mind that such humble ingredients can be elevated in so many ways and make gorg little treats like these cake bombs

🌟 It's official 🌟
I had my EHO visit (environmental health inspection) a few weeks back and I wanted to share my experience of getting 5 stars
We talked
1. Education and training
- I am L2 food safety and hygiene certified
- I did extra allergen training via food.gov.uk
2. Storage and labelling
- I store dry ingredients in clip top containers, clearly labelled with expiry dates & allergens
- I have a temperature gauge in the fridge
3. Allergens
- I have a matrix with allergens listed for every product & variation ie different flavours
- ANY allergies are discussed pre-purchase, and allergen info is listed online and confirmed specifically when ordering
- My box insert details all allergen info too (swipe ⏩). Shoutout to for the inspo, the checkboxes make it super clear
I also showed records of open and close checks, a deep cleaning schedule and a risk assessment. Templates/examples can be found on food.gov.uk and in the safer food better business pack
All in all it was a pleasant visit, confirming I run my kitchen to a very good standard and giving me (and my customers) that extra assurance that when I'm baking I know what I'm doing

Can cake bombs be just as tasty without the buttercream?
Of course!
Out of curiosity, I wanted to see how taste and texture would be affected by leaving buttercream out of the cake bomb filling
Tbh, I thought they'd be less moreish but I actually think the flavour is more intense and it still feels like an indulgent treat!
Plus less calories per bomb means you can eat more than one 😏 it just makes sense

I've gotta say, regardless of who you're rooting for, a caterpillar cake is a 10/10 birthday cake choice πŸ’―
I was playing around with new techniques today anyway, so why not decorate these cake bombs in a caterpillary way

😲 I am shocked!
I was fully prepared to add 1kg of cake bites to the Bank Holiday goodies menu, thinking it'd be about 25-30 pieces per box...
I've weighed and done the math a couple times and it turns out 1kg would be 60+ individual pieces 😱...I was WAY off!
Each bite is currently hand poured, filled and de-moulded; it would take forever & I think Darcie would forget who mama was πŸ˜‚
So these won't be on offer this time round, maybe I'll revisit the 1kg idea when I have a quicker process in place

Cake bombs are a delicious mix of sponge cake and buttercream encased in a chocolate shell 🍫
Think cake pops but bigger and with no stick
Invite them to your next party, big or small, indoors or out, I'm sure they'll be a big hit and make a nice change from cupcakes
Afterall, in the wise words of Julia Child 'a party without cake is just a meeting', and with lockdown restrictions easing who wants to be having meetings 😜
