FAQ: CAN YOU CATER FOR DIETARY REQUIREMENTS?

So, this is quite a complex one and there isn't a completely straight answer, as it really depends on the nature and extent of the dietary requirement in many cases.

For example, I can provide you with a cake made with gluten-free flour, and can take various measures to minimise the possibility of any gluten cross-contamination etc, but my kitchen environment is not stictly gluten-free and I can never completely rule out the risk of traces, such as residual "dust" of gluten containing ingredients in the air.

Likewise with nuts... I handle and work with nuts on certain orders and store them in my kitchen, therefore I cannot ever claim to be a nut-free environment.

Regarding dairy, I may be able to provide something suitable for those with a lactose intolerance, but I might suggest a small separate wedding "favour" option for those particular guests, rather than altering the recipe for your entire cake. My cake recipes have all been developed and taste their absolute best with real butter and other diary containing ingredients, and this is the standard I prefer to work with to deliver the best tasting cake, in my honest personal opinion.

All of my cakes are baked with fresh eggs from the local farm, so I cannot cater for vegan cakes. If this is a must for you, I'm always happy to recommend another cake maker who is more specialist in this area of expertise - there are some great vegan specialist bakers out there.

I'll always explain such scenarious at the point of enquiry to allow a fully informed decision to be made before we agree any booking, often depending on whether we're dealing with a mild dietary intolerance, an extreme allergy, or a strong personal dietary preference. If in any doubt, just pop me an email to enquire anyway and I'll be able to advise what's possible.

WEDDING CAKE MYTH BUSTING

I read on a wedding blog recently that if you're having a small wedding, then you just need a small cake, so you could just attempt it yourself or call in a family member to whip one up for you, and save some money on the way too.

I'm calling this out as a big, fat myth! The truth is, YOU can have whatever size of wedding cake YOU'D like to suit YOUR circumstances, not what a wedding blog says you should do. Also, if a showstopper wedding cake has always been a dream and a priority to you, then you're probably not keen on taking a gamble on attempting to "just whip one up yourself" the night before, and you're not necessarily on a mission to find the cheapest cake either.

Don't get me wrong, small wedding cakes can be equally beautiful. In fact, they often turn out to be some of my favourites, but my point is it's really up to you.

Anna and Mark were married at the end of 2021 and travelled up from England to have a beautiful intimate wedding at . A statement cake was high on their list and as they were staying at the castle for several days with their nearest and dearest, there was plenty of opportunity for a bigger cake to be devoured!

Here's what they had to say:

"Can I just say a huge thank you for the most amazing cake I have ever seen! It was complemented so many times! It was stunning, delicious and made a big statement in our wedding!

We took loads of photos and this one is just one we took with my phone but more professional ones are on their way.

We were delighted with the service you’ve provided and very grateful for everything.

Sending you very best wishes
Mr & Mrs Bailey XX"

POV: IT'S TOO DIFFICULT TO CHOOSE JUST ONE FLAVOUR FOR YOUR WEDDING CAKE

Well, I've got good news for you on this one... Unless you're having a single tier wedding cake, you don't have to narrow it down to choose just one flavour!

If you're having a multi-tiered wedding cake, you can have multiple different flavours of cake - each tier of your cake can be something completely different.

Not only do I suggest this option, I actively encourage this idea! Why? Because it means you can suit the different tastes of your guests and you can enjoy a good selection of different cakes. Variety is the spice of life and all that!

If you ask my opinion on choosing flavours for a three tier wedding cake, I'll usually say this: choose one tier as a darker, possibly richer and/or sweeter cake, something like a chocolate cake which is usually also a good all-round crowd pleaser; pick a lighter, fruiter flavour for another tier, such as lemon or my vanilla with strawberry; then choose your own personal favourite flavour for another tier, because it's your cake at the end of the day, and you should get to enjoy it as much as everyone else!

PS - this ginger and Biscoff concoction is a recent recipe development of mine, and I put it in my cake tasting sample boxes earlier this month for the first time. I'm delighted that a few of you have already come back to me saying how much you enjoyed it, especially since I've got another twist up my sleeve to make it even better! As I mentioned in a previous post, my recipe development never ends - I'm always on a mission to make your cakes taste better and better!

YOUR PHOTOS & FEEDBACK

Another professional shot and little snippet from Robyn and Craig, married at Murrayshall House Hotel last summer:

"We just wanted to email to say a huge thank you for our wedding cake. It was exactly what we wanted, it was beautiful.

All of your sketches helped so much with deciding what we would like and it was great being able to pick different aspects from all the sketches you drew.

The cake tastes delicious and everyone loved it, especially the salted caramel!

Thank you!

YOUR PHOTOS & FEEDBACK

Continuing to share some more of your professional photos and much appreciated feedback....

Robyn and Craig were married last year, and here's what they had to say about their wedding cake experience in the review that they kindly left me:

"We booked with Copper Rose Wedding Cakes last year for our wedding this summer.

We received cake samples which were absolutely delicious and made it very hard to pick our favourite flavours!

After a meeting where we discussed design ideas, we were sent four sketches showing all different styles based on what we liked and our wedding theme. These were all so beautiful. We selected elements of them all for our final design which was just perfect.

Alison was so helpful through the entire process. We received many comments about how delicious the cake was on the day.

Thank you so much for everything Alison!"

FAQ: WHAT FLAVOURS DO YOU OFFER?

I'm often asked what cake flavours I offer, or if I have a list of flavours.

I do have a sample cake "menu" which details a few of my most popular flavours. However, I always caveat that by saying my "menu" isn't ever entirely fixed and I often add new flavours to my repetoire or develop existing recipes and combinations to make them even better.

Funnily, many cake designers will openly admit that they don't necessarily enjoy the baking aspect as much as the decorating aspect. Quite honestly, it's definitely two entirely different skill sets. I actually really enjoy baking and will happily spend time experimenting in the kitchen, hence my "menu" isn't an exhaustive list that remains the same forever.

This version of my vanilla sponge has seen quite a few adaptations, including this version which has a delicious thick homemade strawberry and basil compôte sandwiched between buttery vanilla sponge layers and buttercream speckled with Madagascan vanilla bean seeds - I call it Vanilla Bean Dream ❤

CAKE TASTING

It was a busy one getting everyone's cake tasting sample boxes sent out last week, but I'm sure they're long devoured now and I hope you all enjoyed them.

Some of you have already been in touch to let me know your favourites, but if you haven't yet, I'm keen to know.

Looking forward to getting some more design consultations booked in and underway soon to plan all your upcoming cakes.

Also great to have some new couples on board who have proceeded to make their booking after ordering a "try before you buy" cake tasting option.

It will be a wee while before I do the next cake tasting boxes, but my waiting list for these has already started, so don't delay getting in touch if you're interested in booking with me.

It all starts with an informal no-obligation email to check availability, request a copy of my brochure and briefly discuss any initial ideas for a rough starting quote.  It's as easy as that!

YOUR PHOTOS & FEEDBACK

Hettie & James (Part 3)

"We opted for a two-tier wedding cake as we only had 18 guests, and this size was ample. Flavours we finally decided upon were lemon and elderflower for our top tier and sticky toffee and salted caramel for the bottom tier. We felt this was a good balance for those who like something light and fresh, and those who like something gooey and comforting. Both flavours FYI went down a treat!!

Alison’s cakes are delicious and succulent, and the decorations were spot on. We opted for white roses, thistles, and ruscus in sugar icing which looked perfect!

Alison spent great time and lengths designing every element we’d opted for, and you could honestly tell. The morning of our wedding she was there bang on time, there were no dramas, she just got on with displaying our cake, which ended up being one of the loveliest surprises to walk out to. It was a real showstopper and whenever we look back at our wedding photos and see our beautiful cake and favours, we smile and know we got it right!

If you’re looking for a cake maker who really loves what she does, delivers the brief, and makes the journey feel special along the way, then Alison is the right cake maker for you."

YOUR PHOTOS & FEEDBACK

I said in yesterday's post that it would be continued... Well, here's part two of James and Hettie's beautiful Cairngorms wedding and their stunning tablescape, complete with the favours they ordered alongside their wedding cake - a selection of homemade French style marshmallows and crumbly style Scottish fudge.

" We must mention our table favours. All our guests were raving about our favours for months on end. The raspberry marshmallows were the biggest success, with the fudge being a firm second. "

YOUR PHOTOS & FEEDBACK

As wedding season 2023 doesn't kick off for a wee while yet for me, I thought I'd fill your social media feeds with some of the lovely professional photos and feedback that YOU'VE shared with ME.

I'm starting with this one fresh in my emails this week from the lovely . I've not even had the chance to fully reply and thank them properly yet, but in the midst of a crazy few days preparing all your cake tasting boxes, this honestly made my week and was such a surprise, as well as being the perfect reminder to myself of why I do what I do and how I do it. Thanks so much Hettie and James!

Feedback: " Alison is the loveliest cake maker you will ever meet; she has such a genuine soul and will go the extra mile to deliver your perfect wedding cake. We came across Alison and her cakes on Instagram and oh my goodness they really do taste as good as they look. She has so many flavour options and they all blew our minds. When we received our cake samples, gosh we had a hard choice deciding what to go for! One word of advice...make sure you don’t eat much before sampling because the portions are generous, and you will want to eat it ALL!..."

Beautiful styling by and stunning photos by show just how incredible James and Hettie's alfresco Cairngorms intimate wedding setting really was 😍

To be continued, as these guys shared so many more amazing photos and such kind words - I couldn't fit it all in one post!

In the meantime, if you haven't already shared your professional photos with me, I'd really love to see them ♡

HAPPY VALENTINE'S DAY

However you're celebrating it (or perhaps not), I hope your Valentine's Day has been filled with as much chocolate as this delicious chocolate cake - we all know that's what Valentine's day is really about, right!?

This was actually made as a celebration cake for a special gathering, but wouldn't it be amazing (and not to mention absolutely delicious!) as a tiered wedding cake!? This was dark chocolate and raspberry, but other combinations for the other wedding cake tiers could be chocolate and salted caramel or a good old classic chocolate fudge cake.

Definitely one for the chocolate lovers - who's in? 😄

TASTING TIME

Cake tasting boxes are going out the door tomorrow afternoon, and with any luck they should arrive with you the next day in time for a Valentine's Day treat 😍

Lots of my most popular flavours and a new menu addition in this round of boxes:

♡ Madagascan vanilla with homemade strawberry and basil compôte

♡ Belgian white chocolate and homemade raspberry compôte

♡ Zesty lemon with oodles of thick homemade lemon curd

♡ Sticky toffee inspired with homemade sea-salted caramel sauce

♡ Chocolate fudge with homemade Belgian chocolate sauce

♡ Spicy sticky ginger with Lotus Biscoff

Fillings all made, sponges freshly baked, just a mountain of buttercream to whip up in the morning and then to fill, cut, wrap and box them all up - hopefully all in time to catch the last post. Wish me luck 🙏
