I’ve been a little MIA lately, and I just want to say a big sorry for the quiet spell!

Life has been a bit hectic as I’ve recently started a new job, but I’m hoping to get back into the swing of things and start sharing more bakes and content again soon.

This loaded brownie stack was a special one I made for my twin nephews’ 10th birthday 🎉🍫

Double the boys means double the chocolate! Layers of rich fudgy brownies stacked high, topped with chocolate swirls and their favourite chocolates to celebrate their big day.

Hopefully this is the first of many posts as I get back into the kitchen and behind the camera again!

Ultra-moist, rich, and seriously indulgent, this banana bread is made with beautifully ripe bananas and stuffed with generous chunks of melted chocolate 🤎

Every thick slice is soft, golden, and packed with deep banana flavour and gooey chocolate in every bite 🤤✨

Baked fresh in small batches using an old-school recipe, this is proper comfort baking at its finest — dangerously moreish, perfect with a cuppa ☕ and even better slightly warmed… if you can wait that long 🔥

These gooey brownies were baked especially as a farewell treat for my work colleagues today 🤎

Straight from the oven, they had that deep, rich chocolate aroma that fills the kitchen and makes waiting impossible. I cut into them while they were still hot because I wanted to show exactly how indulgent they are when warm — a soft, fudgy centre that gently melts and oozes, with pockets of molten chocolate running through every slice.

The edges had just enough structure to hold everything together, while the middle stayed irresistibly moist, dense, and gooey — the kind of brownie that almost needs a spoon rather than a plate. They’re rich, comforting, and unapologetically chocolatey, made to be enjoyed warm when they’re at their absolute best.

I also want to apologise for the lack of baking posts recently. It’s been a busy time, and I’ve taken a little step back to rest and reset. Thank you for bearing with me — it feels really lovely to be back sharing my bakes again, especially one that means so much 💛🍫

Meet my Sprinkle Brookie 🍪🍫✨ —

The cookie layer is bursting with sprinkles (because I ran out of choc chips 😅), topped with gooey Dairy Milk brownie, and finished with homemade vanilla frosting… well, most of it.

The corner pieces have just a whisper of icing because, apparently, I got a little too enthusiastic and ran out — consider them the “minimalist chic” pieces.

Soft, chewy, gooey, and ridiculously indulgent… basically a dessert that doesn’t do subtle. 💛🎉

All about being open and honest…

My sticky toffee pudding has officially betrayed me. 😂

Instead of becoming the light, fluffy showstopper it should have been, it came out dense enough to qualify as a small household object.

And why? Because I got impatient, had no eggs, and confidently told myself, “Greek yogurt will totally work.”

Spoiler: it worked… just not in the way I hoped.

The flavour? Unreal. The texture? Let’s just say if sticky toffee pudding had a long-lost cousin who spent its life under a pile of books, this would be it.

It tastes amazing but looks absolutely nothing like a sticky toffee pudding should — more like a caramel-flavoured identity crisis. 🤣🍮✨
