This week’s Bake Off challenge was all about edible fashion, so naturally I decided to make a showstopper I could actually WEAR! 😂

Introducing my Pumpkin Spice Latte Cake Hat! ☕🎃

A gingerbread hat topped with a pumpkin spice latte cake – because why just eat cake when you can wear it too?!

Was it ambitious? Absolutely.
Was it stressful? Just a little.

Week 2 and I took on the Iced Gem challenge!

Tiny biscuits, teeny swirls of colourful royal icing… surely they can’t be that difficult?! 😂

Turns out, when you’re making them from scratch, there’s a little more to an Iced Gem than opening a packet!

But how cute did they turn out?!

Week 2 success! ✔️

First bake of the series… Guinness Chocolate Cupcakes with Cream Cheese Frosting 🍺🍫🧁

Rich, chocolatey Guinness cupcakes topped with a generous swirl of cream cheese frosting. The Guinness gives the sponge such a deep chocolate flavour, balanced perfectly with that sweet, creamy topping.

No Hollywood handshakes here… just me, my kitchen and probably a lot of mess.

How has it already been a whole year?! 🥹💗

A year ago, Just a Pinch of Baking officially began… and what a year it’s been! From countless cookies and celebration cakes to markets, big orders, late-night baking and meeting so many lovely customers along the way.

Every order, follow, share, recommendation and lovely message genuinely means so much. Whether you’ve ordered once, come back for more, stopped by my stall or simply supported from the sidelines - THANK YOU! 🥰

There have definitely been a few “just a pinch… who are we kidding?!” moments along the way 😂 but I wouldn’t change it.

Just a Pinch of Baking is officially a 5 STAR food hygiene rated business! 🥹💗🍪

I’m genuinely SO proud of this one. I’ve been lucky enough to have a 5-star rating before, but after recently moving to a new area, it meant a new council, a new inspection… and another 5 STAR rating! ⭐️

Running a little baking business from home alongside everything else takes a lot of work behind the scenes, so it feels pretty lovely to have that hard work recognised. 💕

A huge thank you to everyone who has ordered from me, visited me at a market, recommended me, shared a post or simply cheered me on. 🫶🏼

Same ridiculously chunky cookies… same 5 ⭐ standards. 🍪

Sorry I’ve been a little quiet on here lately… 👀✈️🇳🇱

I’ve been away in Amsterdam for the Formula 1 🏎️🏁 but don’t worry… there was plenty of very important foodie research happening along the way. 🤭

Stroopwafels, Dutch apple pie, bagels, frites, kibbeling…Safe to say Amsterdam did NOT disappoint on the food front. 🤤

Now I’m back home, suitably inspired and ready to get baking again! 🍪🧁

And who knows… maybe a little Amsterdam-inspired bake needs to make its way onto the menu? 👀🇳🇱
