The idea is to defrost slowly and avoid too rapid a change in temperature, as that would mean condensation develops.

A long standing customer approached us to make a Christening cake for their granddaughters christening. Unfortunately, we are away for the two weeks immediately prior and our cakes have no preservatives at all, meaning they are good for 5-7 days max.

We’ve frozen sponges and buttercream in the past, but we’ve agreed to try something for the first time. Freeze a fully decorated cake!!

We’ll have to make some adjustments to our normal decorating style (more 2D than 3D) but other than that little else.

We are however, running a trial.

Chocolate sponge and buttercream, decorated in white fondant with some colour blobs to check for colourfastness…

5 layers of cling film to try and keep out moisture. 2 of foil to try and prevent freezer burn.

Apparently the freezing part is the easy part 😬
