Presenting the Lemon Meringue Pie Cupcake, a soft moist and rich vanilla cupcake filled with lemon curd (I usually make my own lemon curd but was feeling lazy so I bought lemon curd and I have to say it did not disappoint it is tart and sweet with that citrus punch and a buttery finish as a lemon curd should be) and frosted with a marshmallowy meringue that has been toasted.
