Afternoon! Anyone else at Carfest over the bank holiday weekend?

I know a lot of you weren’t as you were busy shopping on my website and setting off lots of out of stock notifications! Thank you for that 💕 Your orders were either collected by the postie today or will be collected tomorrow morning. If you’ve been on the website to find your favourite happiness is out of stock, I’m just waiting on ingredients to be delivered and I’ll reset the stock counts. Thank you in advance for your patience 🥰

If you were at Carfest, how amazing was it?! Eating was a bit of a struggle as I couldn’t really find much that catered for coeliacs, but I was definitely winning at life to have the excuse to eat fish and chips three days on the bounce thanks to Well Nice Food.

I didn’t have the frickles as I was trying to be all grown up and sensible and have protein in my meal. But I will *definitely* be putting them on my list of things to make at home 🙃

I swapped my baking tools for paint brushes today and finally found the time to visit Pot en Ciel Ceramics in Oundle.

Some of you may remember that Agnes and I were neighbours way back when we both had our businesses at Nene Court.

It was lovely to catch up and it's such a beautiful setting to sit and paint.

This is my creation, which I fear looks far better now than it will after it is fired. I’m so long-sighted that I need glasses for close-up work. And I forgot to take them with me, so I could barely see what I was painting 🙈🤣

Huge fun, though!

Today I baked my first ever Paris-Brest (of a fashion 🤪)

Traditionally, it is filled with a praline cream and topped with flaked almonds. I filled mine with a whipped salted caramel cream and topped it with chocolate fudge sauce and a salted caramel drizzle.

It was sparked by a conversation I had earlier this week with Ben from The GF Table by Ben Haggerty.

He asked me if there was anything I had not baked before that I would like to bake. I didn’t have an answer for him straight away, but the question burrowed its way into my head like a brain equivalent of the proverbial ear worm 🙃

And today, this is where I landed.

My choux pastry piping skills need a little work, but I care not one dot as it was absolutely divine. Definitely one for the recipe vaults 💕
