It is insane!

White chocolate blondie with extra white chocolate chunks. Topped with a passionfruit cheesecake, made with passionfruit liqueur and then drizzle with passionfruit coulis.

Rhubarb, pistachio and ginger - put them all together than you get this cake of heaven!

I even made a video to show you the inside but my sound hasn't worked and I'm not technical enough to work out what happened 🙃

What it would have shown you was three layers of pistachio sponge, layered with ginger custard and rhubarb that has been roasted with ginger and orange. All covered with more ginger custard and chopped pistachios.

The catch up cake for today was for Louis's birthday. He and his brother always come up with fun things for me to bake.

This year was a chocolate cake, made with our favourite rich chocolate sponge, with the middle cut out and filled with a variety of m&m's (chocolate, peanut, mini and salted caramel), before being covered in chocolate icing and topped with chocolate bits.

Pistachio cake with rhubarb cream cheese icing and extra baked vanilla rhubarb

This cake was an absolute dream!
Moist lightly nutty pistachio sponge with vanilla baked rhubarb folded through the cream cheese icing, then topped with more rhubarb.

Flavours and textures were amazing. Definitely one to be repeated! Just need to wait for the rhubarb to grow, as this batch was out for the freezer from last years supplies.

Who doesn't love a chocolate cupcake!

Aiya and I were in London last weekend seeing Mamma Mia! While wandering back from dinner with our favourite , we decided to have our first ever . I couldn't believe how good the texture of their cupcakes was.

So while I continue to find the perfect sponge and chocolate cake recipe, I'm on a mission to make my cupcakes just as good as theirs! (P.s. another baking mission for this year involves little tarts, so watch out for them!)

This is their chocolate cupcake recipe. Texture is great, and still good 2 days later. Not as chocolately as I'd like, but with the icing on top, it all balanced out. Also playing around with my icing to have just the right amount!

I do love a baking experiment! Hope all my baking tasters are ready for cake in all forms 😂😂🥰🥰!

Marking International Women's Day with a classic Victoria Sponge!

Trying to find the perfect sponge recipe that is light and fluffy and tastes delicious. The traditionalists would say no to this one as it has cornflour in it, but apparently the key for the lightness. We'll see!

Filled with whipped cream and some homemade plum jam from the autumn months. Yum!

Carrot cake cupcakes!

It's been a while since our delicious carrot cake graced the CC Instagram page, and with training for two marathons in a month, I thought it was time to bring it back.

This time it comes in the form of cupcakes, and I took the bold leap to try a new recipe. No nuts, different spices and with sultanas.

The result?? No one could tell the difference (other than the sultanas ) 😂😂! They completely smashed them! Clearly a keeper 🥰.
