Hi there!

Apologies for the long silence but with a family, busy work and other general things, I've had to put Spoony's Kitchen on the back burner for a while.

I also wanted to rethink how I could best offer this service to those who require it but also best for me and my family as it needs their time and participation too.

So I thought rather than hire a venue, I'd do what I originally did that got me here and just cook from home and get people to pick up or I could deliver on a set day.

With half term coming upon us soon, please spread the word for those who struggle to provide a hot meal for their children over the school holidays who normally get free school lunches during term time.

I will be thinking up a simple but tasty and nutritious meal for the half term but due to time and resources, there will be limited portions on offer. I'm thinking of Wednesday 25th October for meal pick up and delivery.

It may only be one day but I hope it's one day that people won't have to worry about their children not receiving a hot meal.

With just over a week to go to our first ever session, we've finalised our menu for the day.

Starter: Baked spring rolls and herby sweet potatoes wedges with a sweet chilli or BBQ sauce. Vegetarian option available.

Mains: Sweet and Sour chicken and mixed vegetables with multi grain rice and prawn crackers. Vegetarian option available.

We would like to sincerely thank The Butcher's Block at Billing Garden Centre for providing us with all the meat ingredients.

There are still a few places available at our second sitting at 1pm, please get in touch with us if you'd like to have lunch with us.

We look forward to cooking and having you over for this important lunch on the 20th.

Soups.

One of the most versatile, nutritious and easy meals to make to suit most tastes.

This soup was made with ingredients from the bottom of my fridge that had all gone past it's best before date but that's the wonder of soups, it can use up almost anything left in the fridge.

So this was leftover roast butternut squash and parsnips from a Sunday lunch, one shriveled red pepper, few leaves of red cabbage and a few sprouting potatoes, less the sprouts.

With most soups, the best recipe ideas all start with some chopped onions and garlic to sweat off for 5 minutes so it gives any soup some base flavour and sweetness. Add in the chopped vegetables and cook for another 5 mins.

Then add some water enough to cover the vegetables with either some chicken or vegetable stock and bring to boil, stirring occasionally. I added some chilli powder and tumeric for both colour and flavour as well as the renowned health benefits to it. Simmer for 10-15 mins to infuse and to cook vegetables.

At this stage I taste the soup to see if it needs seasoning because sometimes the stock can be salty and I also added salt to my previously roasted vegetables.

Then with a hand blender I carefully blended the soup mixture and the soup will naturally thicken up from the starch from the potatoes.

I then had some leftover sour cream which I added to temper the heat of the chilli. Served with some toasted bread to mop up the bottom of the bowl.

Making bread of any sort may seem a daunting challenge but it needn't be.

This is a mozzarella and pesto flatbread. No yeast, probiotic Greek yogurt, 5 minutes knead and a 30 minutes rest.

Best thing is you don't need to bake, just 2 mins either side in a frying pan is all you need for this delicious and nutritious snack.

Sacristians..you may not have heard of this delicious snack but it's very simple to make and the kids will love helping bake these.

Filled with almonds which are a great source of protein and fibre but can also help reduce blood pressure and cholesterol levels, this snack is perfect for hungry kids or to go with your tea or coffee.

It's fish Friday but we've made a slight variations on the traditional fish and chips.

Sushi!

We've made seafood sticks, tuna mayonnaise and cooked prawns. They need a bit of effort to make but not so much but it's a healthy, nutritious and delicious meal to have.

Get the whole family involved to learn a new skill and above all enjoy! Have a great weekend.

It's a vegetarian day in our house today but not having meat needn't be a tough choice.

Pizza is seen as a junk food but homemade with a little time and effort, can yield an easy, healthy dinner.

We have mushrooms, olives, sweet peppers, sweetcorn, pineapple (yes!), mozzarella and basil pizza all drizzled with a bit of extra virgin olive oil.

There were 5 clean plates tonight and 5 happy tummies!
