On Wednesday I got some exciting new flour from Talgarth Mill, a restored 18th century watermill, the only working mill in Bannau Brycheiniog National Park. It is called Hen Gymro and it is what is known as a heritage grain - known for it's fantastic flavour! It will be making its way into my wholemeal seeded loaves and possibly some new cakes 👀 see you on Tuesday in Bear Lanes Shopping Centre
Water runs off the mountains to the mill race, turning the same cast iron water wheel used for the last 200 years. The woodwork is new, as are the inner workings of the mill, restored in 2010.
