Two weeks off baking has seemed really strange. Loved sampling the food and drink around the NC500. Hot Chocolate at Cocoa Mountain was heaven! Oh and the bacon roll at Applecross made the rain and the terrifying road Bealach Na Ba worth it. Back to reality in my hairnet and apron now with the oven on.

Great to see Newton-le-Willows supporting Pride. This beauty was from 2019, back then we were the only ones with bunting up and lots of people wanted to know what is was for! The High Street looks amazing with all the flags and flowers, well done everyone.

Indulgent Fudge Brownie Cheesecake.

A Brownie crumb base, topped witha layer of gooey caramel, a layer of chocolate cheesecake and a layer of vanilla and choc chip cheesecake, all topped off with melted chocolate, drizzled with caramel sauce and sprinkled with choc chips and mini fudge bites.

We are on our way to a festival this weekend, but before we left we delivered scones, lemon drizzle, Victoria, confetti traybake, jammy dodger blondies, biscoff blondies and vanilla, amaretti, chocolate and red velvet cuocakes to Fika Coffee and Home a lovely spot to enjoy a coffee and cake at the High Street Hive May Market. Well my TO DO list for Eurovision Party on Saturday is nearly as long as my to TO DO list a day before a Civic Ball used to be with a day to go! I always say I work best with a deadline...... let's hope that's true. Last cake for Fair Winds Bakery went in the oven at 11pm, now it's Eurovision in our house until Sunday.

It was a case of the Midnight Baker last night to get all the orders finished, all collected now and Coronation Cakes delivered to Fika Coffee and Home, pop along and enjoy with a smooth coffee or cakeaway for your celebrations over the weekend.

The things you have to do! Bought a bottle of Baileys to make a cheesecake for an order.....well it would be rude not to have a glass, wouldn't it?
