Your sourdough starter knows autumn has arrived 🍂
If it has suddenly started taking longer to rise, producing fewer bubbles or peaking later than usual, it may not be unhealthy. Your kitchen is probably cooler.
Try giving it a slightly warmer home and using warm—not hot—water when feeding. Most importantly, let the starter set the schedule. Watch for signs of activity instead of feeding it simply because the clock says it is time.
Your starter hasn’t forgotten what to do. It is simply moving at the pace of the season.
Save this for your first cold-weather bake.
Bake slower.
