The bit we have some help with… one 3kg dough piece makes 30 100g Rolls, this clever little machine flattens, divides and rounds the dough pieces ready to rest before flattening into our lovely Batch Rolls.
Saves us a good chunk of time, helps with even sizing whilst still keeping our high standards.

Sourdough….whats the fuss about?

The thing about sourdough bread is there are just so many permutations!

You hear so many ridiculous things about what makes a ‘good’ loaf, it can make you feel silly for not knowing what you should look for!

Has it used a starter that is older than civilisation itself?

Has it been slowly fermented over 2 weeks and massaged ever hour by Paul Hollywood?

Has it used flour milled from wheat grown organically in a Tibetan monastery?

And if you dare to make it at home all the tutorials seem to enjoy making it sound virtually impossible!

So the facts.

If it uses a genuine sourdough starter, not dried like you get in most supermarket sourdough and is slowly proven then most studies seem to agree it suits most peoples digestive system better due to the gluten structure compared to ‘normal’ bread.

This doesn’t mean if you eat a whole loaf with your stew you will be somehow immune. Eat your bread in moderation and enjoy it.

Have the type of bread you enjoy and eat less of it and it will see you well. If you don’t enjoy sourdough and don’t get the fuss then have something else that suits you more.

If you want to try making it at home we are always happy to help you start with a bit of sourdough starter to get you going, whatever you do don’t pay a tenner online for a few grams of flour and water!

Our Sourdough Bread uses a mature starter, is slowly fermented and isn’t full of holes so you can make a sandwich with it too, it does contain a little yeast to help with consistency and timing in our commercial environment which of course would get us ejected from the Pretentious Sourdough Federation but we’ll live with that!

Not all baked goods are the same. They can look similar and sometimes it’s hard to see what you are paying for.

Our teacakes are in this category. A teacake is a teacake right?

Ours are hand moulded round, left to rest so the dough is under no stress before being rolled by hand. This is better because of the amount of fruit we use, exactly 50% of the flour weight.

In a Tesco ‘Finest’ teacake they are all made by huge industrial machines, turning out millions with barely any humans nearby.

Even with all their massive scale and quality compromises ours are only 5p more expensive….oh and 11% heavier….must be all that extra fruit.

A new week and a new special sandwich to tickle your taste buds!

Southern Fried Chicken, Crispy Onions, Lettuce, Mayo AND finally we are doing a trend whilst it actually happens….HOT HONEY!

All this on our mega tasty Salt & Pepper foot long baguette! Well not quite a foot long, it was measured by a man so it’s actually only 10 inches but that will have to do!
