Doing something new with Gina*… any guesses? 🍕
My sister just invested in a new outdoor pizza oven (I may have gently encouraged her towards a better one than she first planned 👀), so naturally my mind went straight to one thing… dough.
When we both lived at mum’s, we had a pizza oven that we rescued from a skip and restored, and we used to keep a stash of frozen dough balls ready to go. They’d thaw in a few hours and made pizza nights ridiculously easy.
This time though, instead of buying them, I’ve made our own.
These are sourdough pizza dough balls, naturally fermented with Gina*, made using a blend of bread flour, Italian 00 flour and a touch of dark rye for extra flavour. Think airy, chewy, flavourful bases - somewhere in the world of Franco Manca style pizzas.
The beauty of them is the convenience as much as the taste. Make ahead, freeze individually, then defrost and use in around 4 hours when the pizza craving hits.
So I wanted to set her up with a freezer stash for the first few uses once she’s ready to fire it up.
Already excited for an evening in the garden soon, and currently thinking butternut squash base, mozzarella, pancetta, hot chilli honey… 🍂
