`Imaginative Gourmet’ repertoire includes both vegetarian and non-vegetarian dishes, all made with fresh local produce, organic where possible. Many of the dishes include Mediterranean, Middle and Far Eastern influences such as Spanikopita (Greek) made with spinach, Feta cheese, spring onions, fresh herbs, nutmeg and wrapped in light flaky filo pastry. I specialise in a wide selection of pies, pas
ties and pastries which are beautifully presented and mouth-watering to the palette. These include Leek, Apple & Mozzarella Parcels; Gorgonzola & Fennel Parcels; Golden Spicy Butter-nut Squash Filo Parcels; Spicy Triangles with chickpeas, Chana Dall, potato, spinach & coconut curry. The Chicken, Bacon & Leek Parcels are made with cream and white wine and are incomparable to any other known pasty. They never fail to delight. Naturally Smoked haddock fish cakes and Thai Fish cakes are always a favourite. My tapas dish: Broad Beans with chorizo Benaojan-style is a wonderful combination of Spanish Chorizo sausage with broad beans in thick savoury juices. I have a wonderful range of tapas dishes for special tapas occasions. Another beautifully presented and mouth-watering dish is the Red Pepper and Almond mousse. Agar Agar is used in this mousse as the setting agent and is therefore a favourite amongst vegetarians and vegans. These are just a few of the dishes that make up the large and very different repertoire of `Imaginative Gourmet’. All of the above are bought to take home or can be heated to eat on the spot.
