Spicy Hot Honey BBQ Prawn Rolls Recipe
Welcome in the summer with smoky, juicy BBQ prawns loaded onto warm, buttery Brioche Rolls. This is a must-try weekend bite:
Ingredients:
- Prawns
- Brioche rolls
- Butter
- Thai red curry paste
- Crispy chilli oil
- Garlic
- Coriander
- Lemon juice
- Fish sauce
- Mayonnaise
- Honey
- Red chilli
- Iceberg lettuce
Method:
1. Make the Thai red curry butter: Melt the butter in a saucepan with Thai red curry paste, crispy chilli oil, minced garlic, coriander, and lemon juice.
2. Make the hot honey mayo: Mix mayo, fish sauce, curry paste, and a squeeze of honey until smooth.
3. Grill the prawns: Thread 4 prawns onto each skewer, season with oil and sea salt. BBQ over medium-high heat for 2-3 mins per side, basting generously with the curry butter.
4. Assemble the rolls: Brush brioche buns with the curry butter and grill for 30 seconds or until toasted. Layer with shredded iceberg lettuce, slide in the hot prawns, and drench in your hot honey mayo and any leftover butter.
