Chocolate Chestnut Cake: a chocolate Genoise (fatless) sponge filled and topped with a semi-sweet chocolate chestnut ganache, crowned with chopped chestnuts in a maple glaze. A bit rustic-looking, this one, but it's for my family who will have devoured it before noticing the flaws!!

Two more fun bakes this week: another carrot cake with maple buttercream frosting; and a chocolatey take on Christmas pudding - chocolate sponge with a white chocolate ganache centre, covered in chocolate buttercream and studded with Maltesers, with fondant decorations to finish it off.

Having been given a "Harry Potter" theme for a cake to celebrate my niece's 15th birthday, I decided to have a play with my new hemisphere cake moulds (from Lakeland Ltd) - so of course it had to be a Snitch!!
