Absolutely loved having these little cuties on my menu for the cafes I supply! So much fun to create and perfect for spring - they’ll definitely be making a return appearance at some point!

Pictured are lemon curd and blueberry mini cakes - lemon and blueberry sponge, frosted with lemon buttercream and finished with homemade lemon curd 😍 and they’re gluten free!

This little cutie was made up of 3 6” layers of coconut raspberry sponge, homemade vanilla custard filling with vanilla custard Swiss meringue buttercream and toasted coconut and fresh raspberries to finish!

Hi all! I feel like I blinked and went from Christmas to New Year to my holiday and now it’s the end of January! I really need to get back on track with my social media efforts - anyone else feel like it’s a full time job in itself?! 😬

This was my last celebration cake of 2025, a chunky 10” chocolate and raspberry fudge, which went out to join a 50th birthday party on New Year’s Eve! 😍

Well over 5kg of cake 😬 hard to capture the size of this chocolate fudge of epic proportions on camera, but it was a beast! Always one of my favourite cakes to make, a simple flavour but classic, beautiful and most of all bloomin delicious! 🤎

Sticky date sponge, salted caramel buttercream, extra caramel drizzle for good measure, with a sprinkle of salty maple toasted seeds… just yum 🧡
