Watching and on their food tour down under reminded me how much I love Lamingtons so I made some mini ones (in the faint hope that one would be enough and I’d not bust my healthy eating plan too much !!!! lol) a bit messy to make but I find freezing the cake before dipping in the chocolate and coconut helps.

Happy Birthday to me ….. made myself a chocolate layer cake with white chocolate Swiss meringue filling and a whipped milk chocolate ganache coating. Never too much chocolate when it comes to birthday cake 🎂🥳😊.

Exciting delivery yesterday - flavour of the month box from love love love chocolate orange …. Only 94 calories each bar so that means I can eat 2….. or 3. !!!! Lol

It’s beginning to smell like Christmas !!!! A busy baking day today with 2 full size cakes and a few dozen mini loaves. Now for a few months resting before icing and gifting them.

It’s been a chutney / pickle kind of week this week - I had a huge basket of tomatoes which resulted in me making tomato chutney, which then inspired me to use other homegrown veg to make piccalilli. As you will know getting gluten free chutneys and pickles is not always easy so fingers crossed my recipes work - if they do I’ll be posting them in about 6 weeks when these have matured enough to have a taste test

Been feeling quite ill lately but was fortunate to have a few days away in the Peak District and went to the amazing and Brought back some delicious strawberry and champagne preserve so made some almond biscuits to showcase it. Rainy day of biscuit eating today …. Well someone’s got to do it …. 🤣😂

Wow what a day - a great show and picked up some new plants I’d not seen before - all the walking was fueled by golden caramel flapjack …. Apparently you can freeze the bars …. That’s assuming there is any left ….lol

Tried this naturally gluten free recipe from magazine and it went down so well I was asked to make a double batch for my mum to take to an event ….. really delicious and just as good a day or two later. The recipe uses ground almonds as the base and I added extra almond flavour with some essence as we all love almond .

Raspberry madeleines made with my homegrown raspberries…. Delicious. Plant to plate in under 20 minutes (including cooking time)

My best haul of raspberries so far, up until now I’ve just been eating a few eat day as I go round watering but today was a good day - so many more to come in the next few days too so I’m planning some raspberry madeleines in the next few days to showcase them

One benefit of not being able to bake is spending more time enjoying my garden. My beautiful poppies have come up for the first time after 4 years of trying. And look at the tiny little one giving it a good try. So pretty.
