John Spillings set up The Penny Bun Bakehouse in 2010 with the aim of getting traditional, handcraft

Having trained as a chef for over 12 years in many of the top Michelin star restaurants across the country, his love for bread and patisserie was discovered whilst working for Raymond Blanc at Le Manoir aux Quat'Saisons. Inspired by French techniques and passion for real bread, he moved back home to Suffolk to open a wholesale bakery, crafting baked goods for hotels, restaurants, gastro pubs and delicatessens in the local area.

A galette; a flat free form rustic pastry tart filled with a sweet or savoury filling. Our galette this week is filled with smoked bacon, onion, roasted field mushrooms, garden herb & Baron Bigod fresh from Fen Farm Dairy. Now tell me that doesn’t sound delicious!

After a busy week of baking Johnny decided he had enough energy to head down to Fistral in Cornwall Saturday afternoon for the rest of the weekend to support Waveney Surf Life Saving Club who were proudly representing the East Coast at the Open Nationals. As you can see, the bright pink hat makes the perfect spot to pause for a croissant, and the fine svelte figures in the background might be familiar to one or two of you!

We’ll be popping up at Halesworth market this weekend as well as the Box & Bakehouse 🥐
