Time for a post. Despite too many Prime Ministers treating the population as statistics as opposed to people, Christmas is easily my favorite time of year. People work too hard to not to enjoy it, so whether it's a swirl, mince pie or decking your balls (is that the right phrase??), I hope you find a little enjoyment somewhere.

This may be on the more boring, least exciting Instagram style photos but this little bread is actually the one that has grown most in popularity over the last couple of years.

What is it?

This has actually now become a staple in the household and by far and away the most popular bread for wholesale now. It's just a tinned sliced sourdough. I've said before I find it beyond frustrating people say a sourdough should be this or that when it's actually a process NOT what the crumb, ear , colour etc should be. There are too many flours, baking styles, cultures , people's preference to simply lump sourdough into anything. So is it in the normal sourdough you see on social media? Nope but it doesn't stop it being a sourdough.

12 years ago this very month I did my very first market which were the seeds of this bakery. There's been a lot baking since then, 100'000 miles driven to deliver, having bread in 3 counties yet every now and then you do some work that you'll long remember (hopefully).

My baking Mount Rushmore (albeit a slightly bigger quantity) will be: a MasterChef judge and author coming up and telling me the bread was unbelievable, a Michelin star reviewer saying the bread is some of the best they've ever had , baking for a Royal, supplying Towcester Racecourse back when it did horse racing and supplying Silverstone Circuit including for the British Grand Prix before it tired me out too much.

And these swirls. There is nothing different about them and it's something I've done a few times but they're for someone's wedding. It's such an incredible thing to do that you can make something to be a part of someone's wedding day because of how much they like it. It's also about the biggest pressure.

Doing things like this and the others is why I don't know what to make about reviews (unless they're bad). It doesn't hold meaning to me personally, I mean The Fat Duck has the same star rating as the Yo! kiosk at my local Tesco. Some people have voted Love Island 10/10 on IMDB. What could I possibly gather from this? I couldn't care less if someone doesn't like what we put out. You don't have to, your opinion isn't fact. Some people like brie, some like stilton.

And after 13 years this remains my least favourite part of this industry is that someone's opinion is presented as fact. No one has a right to say how something should be. Bread or anything can be whatever you want. There's no law saying what eg a sourdough should be, it's a process of how it's made - that's it. Just because you think it should be like something from Tartine you're going to dismiss a Russian black bread? Although I'll take a punt those who do probably don't know what a Russian black bread is. It's become an idiots parade of saying it should be this, that and the other. No it shouldn't. If you like something cool, if not then be aware plenty of people do. Food should be different and expressive.

You may notice I don't post very often. Then again how can you notice it if it does not exist? I have no idea. In fact I have no idea what the point of writing that to begin with was. It seems like a time wasting exercise. Which it is but exercise is good for you. So that's good. This has seemingly become The Stanley Parable.

Anyway now that's over with we've added a few new things over the last month or so, so it would probably be good mention what's new on Wednesday .

So we're back properly today and a new year means new changes. The old name was a parody and it's from an old time which for many years was a great place before a spell of toxicity made it a place to move on from. So new move, new focus and a new name. We're at the site of a listed building that used to be, for a long time, a shoemakers. Therefore it seems most fitting to say; welcome to the era of the Old Cobblers Bakehouse.
