Notes on cake transportation and storage:
If you are collecting you wi

ll need a car with a boot as this is the flattest and safest place in a car for a cake. As yours is 2 tier cake the car should ideally be a hatchback/SUV. You will need to drive very carefully and slowly over speed bumps and dips on the road as these could cause cake collapse. I frequently get tooted on cake deliveries so find it best now to put on my hazard lights! Also please don't leave the cake in a stationary car or a warm room. The cake will be nut and banana free but does contain gluten, eggs and dairy. I don't use packet mixes. The icing is Renshaw if you need to check for allergens. The chocolate I use has a label indicating it may contain nuts. After it is cut, the cake will last in an airtight container 2-3 days in a cool environment or 5 days wrapped in cling film in the fridge. However the fridge hardens the sponge so the taste isn't quite as good. When you want to eat it, take it out of the fridge and let it come back to room temperature before you eat it, as the taste is so much better.
