🧈 EASY RECIPE | So you have probably seen these VIRAL Dubai Chewy Cookies 두쫀쿠 all over the internet — they are not actually cookies (?) but they are soooo additive like a good cookie 🍪🤤
🌸Method:
Part A) The filling
1. Melt butter with low-medium heat
2. Gently toast Kataifi. I used pre cooked roasted ones. Still heated it, for extra crunch & helps with next step.
3. Take off heat, add pistachio cream and a pinch of salt (optional; a pinch of salt always does wonders 😉). Mix well. Let cool in freezer for 15 mins.
4. Take a tray/ container, you are going to have the fillings rolled in ball shapes. Use a spoon/ ice cream scoop/ gloves. Make 12-15, depending the size you want. Set aside.
Part B) The chewy exterior
1. Melt butter on medium heat
2. Add marshmallows, let it melt almost completely. It will take you around 5-10 mins. Don’t let it burn.
3. Take off heat, add in sifted cocoa powder and mix well.
4. Transfer to a piece of baking paper. Spread it with a spatula and let cool.
5. Divide into same number of pieces of your fillings.
Assemble) A + B
1. Prepare a small bowl with sifted cocoa powder
2. Lightly oil your hands/ gloves or dust with extra cocoa powder so it is not sticky to work with. I also used a rolling pin to spread each pieces evenly.
2. Wrap each ball fillings with marshmallow like a dumpling
3. Roll ball in the bowl of cocoa powder and you have got your first piece of chewy cookie!
Can be kept in room temperature for 3 day.
