A Tuesday rising with my homeschooled 4 year old. Most Tuesdays are spent at nature club, a local children’s club rooted in everything nature. 🌿

Each week the children take on a new task in the community garden and this weeks task was to pick their own herbs, to wander around the garden smelling and tasting the herbs, then tie them to string to dry for future use 🌻 Then they took herbs that were previously dried, bashed them around in a pestle & mortar and made their own dried herb mix to use at home whilst cooking 🌸

Z chose sage, apple mint, lavender and rosemary for her dried herb bundle. 🌿

I’ve found myself spending less time in the kitchen recently, and it’s not that my love for cooking or spending hours upon end in there has disappeared, I’ve just found more of a love of preparing meals that are ready within a matter of minutes rather than hours, or of those that sit upon the stove and do the work for themselves, that taste delightful and fill me and my family with enough goodness for that moment.

This is a Cavolo Nero & Basil Spaghetti. A dish that’s ready within 20 minutes. A family favourite that my 4 year old adores and lovingly calls ‘her green pasta’. Little does she know, she’s eating a exceptional portion of greens 🌿

Pink Dragonfruit & Pineapple Juice 💕

A juice that brings much joy every time I set my eyes upon it. It’s vibrancy feels inviting, it feels like love, it feels like skipping through fields of tulips 💕

One of my daughter’s friends was overjoyed to receive this juice because she said that it was ‘Barbie juice’ 😅 Plus it tasted delicious.

Recipe:

1 whole pineapple
2 pink dragon fruits
500ml Spring water

Blend, strain & Sip 💕

I’ve been dreaming about these ever since I made them. Should I have eaten 10 in one day? Absolutely not! But I’ll do it all over again. 🌿

These fried potato cakes were made with leftover mashed potatoes, cabbage and cavolo nero, perked up with a good amount of fresh coriander, turmeric, garlic, chillis and sea salt rolled into palm sized balls, coated in a chickpea flour batter and deep fried in grapeseed oil 🌶️

These potato cakes are incredibly moreish and the only way I’ll be using up leftover mashed potatoes from now on x
