Melbourne (Aus) born, married to an Italian and a mother of one son. I love to eat cake (we all do in our family) and to bake. Blondies Loaf came about after baking a weekly loaf cake for family and friends. I played with my favourite recipe for 6 months altering the sugar and butter content to reduce as much as possible without compromising the taste or structure of the loaf. The result is a 'Ma

deira style' loaf with 20% less sugar, 60% less butter and 50% less egg. The loaf cakes are simple, light and moist. They are made naked (no icing) and can be eaten for breakfast right through to after dinner. Blondies loaf cakes are made with Organic flour (bought directly from Shipton Mill in Gloucestershire), organic baking powder, organic whole milk, butter and greek style yogurt, unrefined golden caster sugar, free range/organic eggs, Littlepod Vanilla, Callebaut Cocoa, freeze dried Raspberries and the Curd Herd fruit curds from Scarlett & Mustard.

Yesterday was my son’s second lockdown birthday, we celebrated at home with a greek yogurt chocolate layer cake with raspberry jam in the middle and topped with milk and dark chocolate ganache..

Greek Yogurt Vanilla loaf with a Greek Yogurt, White Chocolate and Raspberry Ganache. I substituted double cream for greek style yogurt (which I use in my cakes) and white chocolate melts for the ganache and added freeze dried raspberries.. a lovely light and tangy topping..

I couldn’t decide which cakes to make for my 50th, so I made my two favourite cakes. Greek yogurt chocolate layer cake, with homemade raspberry sauce between the layers, topped with chocolate ganache and fresh raspberries, the other was an upside down raspberry, greek yogurt and vanilla loaf.. It may be lockdown, but we can still treat ourselves..

Chocolate and hazelnut traybake.. I’ve used my usual chocolate cake recipe with a little extra greek yogurt for fudginess and extra cocoa for a deeper flavour..spread thinly in a tray for a fudgy, chocolate traybake..

Upside down greek yogurt, raspberry & vanilla loaf.. it’s a cake and a pudding all in one.. I always try to keep some berries in the freezer and I’m sure any berries would work well..

It’s my son’s 11th Birthday today.. his yearly request of a chocolate and raspberry cake. Chocolate cake, raspberry jam in the middle, chocolate ganache over the top and topped with raspberries..

On the menu this week.. Greek Yogurt Lamington loaves and Greek Yogurt Orange Curd loaves. I changed the chocolate topping on the loaf from a ganache to a chocolate sauce. This allows the chocolate to seep into the cake 🍫 🥥 .... Enjoy the sun while it’s out!
