A little behind the scenes of me stacking and filling this vanilla cake with vanilla buttercream only — exactly how my client wanted it.

Sometimes you really don’t need to add anything else. No jam, no extra filling… just soft vanilla sponge and silky vanilla buttercream. 🤍

But now I’m curious… are you team jam & buttercream or team buttercream only? 👀

Congratulations to the happy couple! 🤍

It was such an honour to create this elegant two-tier wedding cake for their beautiful celebration at Addington Palace.

This was my first time delivering a cake for an Asian wedding, and I loved being part of such a special day. The cake featured a palette-textured ganache finish, fresh white roses and artificial baby’s breath, finished with the couple’s personalised initials.

I was also lucky enough to see the bride as she walked into the ceremony with her dad. She looked absolutely stunning in her Asian wedding dress!

The sweetest feedback came the following day when the bride told me her now-husband, who doesn’t usually like cake, had three slices! There’s nothing better than hearing that the cake was enjoyed as much as I enjoyed creating it.

Before I start my crumb coat, I always take a moment to trim any uneven cake edges.

It might seem like an extra step, but it actually makes the rest of the decorating process so much easier!

✨ It improves the final shape – trimming gives me straighter, more even sides and helps create that clean silhouette.

✨ It provides a better foundation for buttercream – rather than trying to use layers of buttercream to fill and correct uneven edges, I start with a neater cake.

The result? Less buttercream fighting, less time correcting imperfections and a much smoother finish. 🙌🏾

Because when it comes to cake decorating… work smart, not hard! 😉
