New today and on sale at Au Ciel in Dulwich Village. Pork & Fennel sausage rolls. Homemade butter puff-pastry and a filling of pork seasoned with onion & fennel seeds.

Friday's sourdough has a lovely, open crumb and a chewy crust. Full of flavour. It made a great Rarebit for lunch today.

The cold weather is perfect for making viennoiseries... it's a slow and rewarding process when you do it by hand but the results are reward enough. I'm very fussy about the butter I use: beurre normande has a sweeter taste and a lower water content, meaning that the pastries taste better and flake better.

I've started the pre-ferment today. The lamination will happen tomorrow and they'll be out of the oven first thing on New Year's Day.

Croissants: £1.80 each (12 available)
Pain Au Chocolat: £2 each (8 available)
Pain Aux Amandes: £2 each (8 available)

I've just finished the final batch of marshmallows. This is the Kir Royale flavour - fresh blackcurrants, Kir and a bit of extra vodka for luck. Also available: Gin & Tonic (Fevertree, lemon, Gordon's Gin) and Wild Strawberry Liqueur (fresh strawberries, Fraise du Bois Liqueur). Not suitable for vegetarians or for the teetotal.

The The Inkspot Brewery loaf. Stoneground spelt flour, sourdough and local beer. I can definitely smell the hops & malt.
