MOUTH WATERING SCRAMBLED EGG

INGREDIENTS:

* 2 eggs.

* 2 tablespoon of milk.

* pinch of salt.

* pinch of pepper.

* 1 tablespoon of oil( you can use 2 tablespoon of butter in the absence of oil).

METHOD

- Put oil in the pot or frying pan and heat.

- Break eggs in the bowl and beat.

Add salt and pepper,pour into the oil and add milk.
OR
-Add a pinch of black pepper to your egg,add milk and whisk.
- Add 2 tablespoon of butter into your pan lower the heat and turn it,is not suppose to burn.
NOTE: you can add sugar but Americans eat with salt).
_ Bring it down not to burn but it must be cooked.

HOW TO MAKE TIN TOMATOES (tomatoe paste) AND PRESERVE For About 6 months.

INGREDIENTS:

*Fresh tomatoes

* Jar with lid.(container or bottle that has cover)

* Blender or grinding machine.

* Lemon or vinegar.

*Pot

*Water

PROCESS

1. Get tomatoes blanch it (blanch your tomatoes to retain the colour).

2. Blend it or take it to mill to grind.

3. Steam in a pot for 8 hours but don't let it burn,it must be very dry.

4. put it inside can or jar fill it 3/4 get vinegar or lemon juice put tomatoes again then cork it.

TO cork-----; when the water is boiling put it inside the boiling water for 2 hours to ensure is air tight.. Keep it in your shelf ,it can stay up to 6 months. you can use anytime once is open don't keep it back again.

HOW TO AFANG SOUP(for 7portion)

INGREDIENTS:

1. Okazi 1kg

2. Water leaf 2.5kg

3. Dry fish 200g

4. Stockfish head 2pieces

5.Seasoning cube 5D cubes.

6. Crayfish 100g

7. periwinkle 100g (4 cups)

8. palm oil 375ml(one and half cup)

9.salt to taste.

10.Canda or kpomor 250ml.

11. Onions 100g.

12.Fresh pepper to taste.

PROCESS

* Wash dry fish and stock fish then boil till tender .

* Add palm oil, onions,water leaf, crayfish, seasoning cubes,pepper,salt and boil together for 5minutes.

* Add okazi ,stir properly.

*Add periwinkles, reduce heat and simmer for 2 minutes.

BREAKFAST DISH

PANCAKE

INGREDIENTS NEEDED:

*130g of flour
*25g or 2 tablespoon of sugar
*1 and half teaspoon of Baking powder.
* Half teaspoon of Baking soda .
* A pinch of salt.
* 1 cup of milk.
* 2 tablespoon of butter
* 1 tablespoon of white vinegar.
* 1 large egg.
* Half teaspoon of vanilla extract.

METHOD

1. mix vinegar with milk and allow to stand for 10 minutes to make sour milk.

2. Combine dry ingredients in a mixing bowl, you can add more sugar to taste.

3. Another mixing bowl combine wet ingredients except butter since butter will solidify when it come in contact with cold milk.

4. Create a well in the middle of the dry ingredients and pour wet ingredients,mix to combine. Do not over mix. Note, Remember pancake lumps are good.

5. Heat a non-stick frying pan.

6. Greese the pan little with oil when pan is hot reduce the heat to medium and pour the mixture inside the pan using 1/3 cup of measurement.

NOTE: you will not need to greese the pan again before you do the next one.
Everyone know that the first pancake never come out perfect.

YUMMY DOUGHNUT

INGREDIENTS:

* 500g of flour
* 100g of sugar
* 1 egg
* 1 cup of warm milk
* 1 cup of warm water
* 1 tablespoon of yeast
* half teaspoon of nutmeg
* A pinch of salt
* Oil for deep-frying.

DIRECTION
1. Seeve flour,salt and nutmeg.

2. Cream yeast and sugar( add warm water or milk to yeast & sugar).live it to stand for about 20 minutes.

3. Robbing the biten egg,pour the cream yeast mixture and flour and knead for about 20 minutes.

4. live on flour surface for 30minutes(cover it).

5. Cut out into doughnut shape,allow to set for about 15minutes. Deep-fry only.

HOW TO MAKE BREAD (Basic bread)

INGREDIENTS:

* 500g of flour(4cups)
* 100g of sugar
*100g of butter
* 1 cup of warm water
* 1 teaspoon of salt
* 1 tablespoon of yeast
* milk
* Egg

DIRECTION

1. Mix warm water,yeast and suger together,stir very well let it stand.

2. Add butter and salt to the flour.

3. Add yeast mixture ( that is warm water,yeast and suger mixture).

4. knead flour on a surface for 8 minutes.

5. keep in a bowl and cover for 8 minutes.

6. knead again for 7 minutes and cover again for 30 mins.

7.prepare pan and cut dough into pan,leave to rise for 1 hour.

8. place in a moderate heat oven gently.
