Christmas has come early to Astrid! We have just spent an incredible (intense!) week with international panettone consultant .bernardi77 in the Atelier (which he refers to as our ‘laboratorio’ to give you an idea of the scientific approach here!)
Al travels the globe consulting on panettone and generously sharing his incredible knowledge.
Needless to say, we are very proud to have been the first UK bakery he has consulted in, and even more proud of the products we have developed together. This stunning, melt-in-the-mouth panettone seems effortless; as light as air, but is -in fact- structurally complex and technically demanding; the ballerina of the baking world.
We will have a small number of our test batch panettoni available in Astrid Atelier this weekend, but I’m sure they won’t last long. See you in the morning for breakfast, ragazzi! ♥️
