Let me tell you something about bakeries and heatwaves… they are not compatible. If everything in a bakery kitchen relies on the invisible ingredients of time and temperature, and suddenly one of them changes, well then, basically EVERYTHING changes.
It’s a battle against accelerated fermentation. It’s a mindset shift to pivot on every process and alter the workflow of the day to take account of the heat. It’s a physical challenge to cope with the scorching oven, and every fridge and freezer working overtime, producing even more heat and more water in condensation. It’s a numbers game to balance much dough the fridges can hold and how many openings and closings of the door they can handle before the internal temperature starts to rise.
Big hats off to all my bakers -and ALL THE BAKERS- for working through this heatwave; for keeping smiles on their faces and getting the goods onto the Breakfast Trolley and the Atelier counter this morning. Heroes all ⚡️⚡️⚡️

Astrid St Honoré Croissant Tart ✨
Today is the feast day of St Honoré, the patron saint of bakers and pastry chefs, so we have made our (obviously croissant-forward) take on a Gateau St Honoré for your delectation. It’s the crispest, frilliest croissant pastry filled with baked crème patisserie, whipped mascarpone Chantilly cream and topped with a filled, caramelised choux bun.

Running a bakery is hard. It’s exhausting and antisocial and relentless but it’s also the absolutely best thing ever! I feel so lucky to be surrounded by such a talented and enthusiastic team. I feel lucky that I work near where I live (especially today when I got a flat tyre driving over a nail 🙈…) and SO LUCKY that we get to make beautiful, delicious things on the daily. My lunch today was an OUTRAGEOUS cherry jam and whipped cream Black Forest Brioche, for example… (swipe to see.) In other treats this week, I even managed to see the wonderful exhibition at the …which just reminded me of pastries, of course…
