🧀最夢幻質感的日式巴斯克芝士蛋糕

融合西班牙巴斯克芝士蛋糕和日本梳乎厘芝士蛋糕的做法,這個經歷超過30次試驗才成功的日式巴斯克芝士蛋糕,是我們保證在倫敦吃過最creamy,最濃郁,但又未到流心液態的芝士蛋糕。

先將混合不同芝士的蛋糕糊以商用焗爐250度以上的超高温烤焗,再以85度慢烤。在360度焦糖化的外表下,蛋糕中心卻幼滑如布甸。高級芝士鹹甜的味道,配搭細緻柔軟的夢幻口感,加上馬達加斯加雲尼拿籽的香氣和減糖不膩配方,只有親身品嘗,才能體會箇中滋味。

兩個從小到大,每年都以朱古力蛋糕慶祝生日的人。兩個幸運遇上擁有同樣愛好、同樣價值觀的香港人。

這份熱愛促使我們多年來到訪不同國家,尋覓世上最好的朱古力蛋糕。從隱世小店到米芝蓮餐廳,但凡有關朱古力的,我們都不會錯過。這些寶貴的經驗,加上來自L’École Valrhona學院的專業知識,都為日後研發食譜打下基礎,讓我們能夠將世界各地朱古力蛋糕的精髓帶給大家,尤以日本、法國和葡萄牙為最。

2019年,我們沒有如同身邊的情侶夫婦一樣,買車置業組織家庭,而是將儲下的金錢開設屬於我們自己的二人蛋糕店404 Bakery。我們本來都在大公司有安穩工作,能夠辭掉工作追夢,到獲得HK’s Best Chocolate Cake的稱號,一切都拜大家所賜(當中包括不少自費媒體、DJ、作家、記者、藝人、KOL和食家,我們感激至今)。您們的眷顧,是那痛苦不堪的三年間,發生在我倆身上最美好的事情。

2022年冬天,我們決定結業前往英國。面對家人朋友以至客人的離別,面對香港「生於斯,長於斯」的感情,面對自由的追求,這誠然是人生下過最艱難,但同時最不得已的決定。

到埗後,身邊的人都勸說先找工作,再想將來。但我們相信朱古力蛋糕,如同英文,如同自由,是普世語言。所以2023年,今年,我們想再冒險多一次,追尋夢想,將香港最美味的朱古力蛋糕帶到英國。

如同朱古力獎門人W***y Wonka所説:"We are the music makers, and we are the dreamers of dreams.”。

Hi, we are Mr & Mrs 404👨🏻‍🍳👩🏻‍🍳.

Ever since we can remember, we have celebrated every single birthday with a chocolate cake.

Our love for this heavenly dessert only grows stronger as we travel the world over the years in search of the best ones. From Michelin-starred restaurants to boutique bakeries, we sought out anything chocolatey. In doing so, we learned the foundations of creating an exquisite chocolate cake. Our travels, culinary backgrounds and knowledge from L’École Valrhona inspired us to develop our own recipes, which are heavily influenced by our experiences in Japan, France, and Portugal.

In 2019, instead of saving for a house deposit like most couples, we followed our passion and made a bold decision. We quit our jobs and started 404 Bakery, using all of our savings. By some miracle, our dedication paid off. The appreciation we received from our customers and the press earned us the title of Hong Kong's Best Chocolate Cake. For the following years, 404 Bakery became our beacon of hope during the city's darkest days.

In 2022 winter, we relocated from Hong Kong to London due to devastating changes to our home. While most people told us to find a job and move on from the past, we believe that chocolate cakes, just like English, are a universal language. And so in 2023, now, we wish to take our chances again and bring the nation Hong Kong's best chocolate cakes.

你知道心太軟的歷史嗎?(English below)

Mr & Mrs 404初次約會就是在洲際扒房品嚐招牌心太軟,但近二十年心太軟普及化,你又知道她高貴的來歷嗎?

1981年,法國米芝連三星名廚Michel Bras為了展現頂級朱古力的味道,發明了世上第一個流心朱古力蛋糕。做法是以蛋糕糊包裹著雪成冰球的朱古力漿,再放在焗爐烤。蛋糕烤熟之際,中心的朱古力剛好溶化,故為之心太軟。

但真正令心太軟發揚光大的,卻是同樣生於法國,90年代曾在香港文華開設Vong的Jean-Georges Vongerichten。

1987年,Vong發現在高温下短時間將蛋糕表面烤熟,中間一樣會呈現流心狀態,且味道更濃郁,這也成為心太軟的主流做法。

那Gâteau au Chocolat是心太軟嗎?非也。

1998年,Ken’s Cafe Tokyo創辦人Kenji Ujiie發現心太軟的做法依賴高糖高油的蛋糕糊,且由於麵粉未烤熟,味道還是有所欠缺,於是就發明了一個無麵粉,無忌廉的神奇3重食感朱古力蛋糕。之後8年,Kenji靠著這款蛋糕,一直穩坐Tabelog全日本朱古力類別第一,如今已是日本百名店。

而這,才是Gâteau au Chocolat的原形。

2007年,Mr 404在東京嚐到那前所未有濃郁的朱古力之味。可惜十多年後跟Mrs 404同遊舊地,當年的味道隨著擴展已不復當年。

這就是為何Gâteau au Chocolat成了404的第一個蛋糕。既然無法重温,我們就自己創造頂級朱古力蛋糕最純粹的感動。

Gâteau au Chocolat以世上第一款黑朱古力,Valrhona的Guanaja 70%朱古力為基礎,配上Clarence Court或St. Ewe雞蛋和Croxton Manor牛油焗製,在三種温度下會呈現三種不同的神奇口感。跟心太軟不同,在完全沒使用麵粉和過多糖份的情況下,更具質感層次的Gâteau au Chocolat透過精準的温度調控和乳化過程,完美展現高級朱古力醇厚複雜的味道。加上高温下的化學反應,更會產生如陳年紅酒般綿延不絕的餘韻。

The Story of Gâteau au Chocolat

In 1981, Michelin 3-star chef Michel Bras created the world's first Molten Chocolate Cake by encasing frozen ganache with cake batter. However, it was Jean-Georges Vongerichten, another French chef, who popularized it by baking a single cake batter at a higher temperature for a shorter time, setting the norm.

So, is our Gâteau au Chocolat a Molten Chocolate Cake? Not quite.

In 1998, Kenji Ujiie, the founder of Ken's Cafe Tokyo, developed a new recipe. His recipe eliminated gluten and excessive sugar, resulting in a magical cake with 3 different textures when tasted at varying temperatures. Ujiie's place was Japan's No.1 chocolate destination on Tabelog for 8 consecutive years.

In 2007, Mr. 404 had one of his best chocolate experiences there. Returning a decade later though, the taste somehow had changed, possibly due to mass production.

That's why we chose Gâteau au Chocolat as our first cake when we opened in 2019, aiming to recreate an unforgettable experience from the past.

一年前,2022年5月24日,
是我們宣布結業的日子。

當天公告的文字一早已經寫好,
結業也非一時三刻的決定。

但2022年5月24日晚上9時正,
在中環海傍按下”post”的那一刻,
還是我認識Mrs 404以來,
看過她哭得最厲害的樣子。

我抱著淚如雨下的Mrs 404,想要安慰她。
但望向維多利亞港的那一瞬,
我的眼眶也紅了。

作為一間二人蛋糕店,
404 Bakery佔據了我們生活90%的時間。

身為香港人,
這座城市造就了我們99%的人生。

「走咗,我應承你,我哋一樣會開返404 Bakery。」我不由自主的説了這句話。

説罷當下,我倆的心情不知何故,也跟著平伏下來。

或者除了香港這片土地,404 Bakery也慢慢成為了我們的根。但不同於這個城市的命運,這是一條我們可以自己捉緊的根。所以這句說話不只是對Mrs 404承諾,也是對我自己,和很多很多香港客人的承諾。

一年後的今天,2023年5月23日,
404 Bakery終於在倫敦重開了。

New home. Same dream. Better cakes.

One year ago, on May 24, 2022, marked the day when 404 Bakery announced its closure in Hong Kong.

The announcement had been written weeks ago, and the decision to close and leave the city had’t been made lightly.

At 9:00 PM that night, the moment I posted the announcement, I witnessed Mrs. 404, my partner, shedding the most heartfelt tears I had ever seen since we met.

I held her tight and wanted to offer solace. Yet, as I glanced out towards Victoria Harbour, an icon of Hong Kong, my own eyes welled up.

As a two-person bakery, 404 Bakery has taken up 90% of our time. But beyond that, it is Hong Kong, the place we call home, that holds an even greater significance, shaping 99% of our lives.

"I promise you we'll reopen 404 Bakery," I blurted out without thinking.

Upon my words, our emotions began to subside, as if by some unspoken agreement.

That’s when we realized 404 Bakery was more than a business to us. It was our anchor, providing us with a sense of security and a purpose to keep on going in life, much like our home in the past. Our home, however, has changed. While Hong Kong's fate was no longer within its own hands, 404 Bakery was the only thing we could hold onto. It became our second root.

So, those words I spoke were not just a promise to Mrs. 404, but also a promise to myself and all the customers we had in Hong Kong, many of whom have also relocated to new places.

And now, one year later, on May 23, 2023, the day has come. 404 Bakery finally reopens its doors in London.

New home. Same dream. But this time, we strive to create even better cakes, filled with the love and passion that has fueled our journey from Hong Kong, from where it all started.

🇭🇰Made in HK的世界最美味朱古力蛋糕

上星期六,已經三度回購的客人Ms J又一次駕車前來交收,臨別時她説其實她在葡萄牙試過Landeau的蛋糕,但覺得我們的更好吃,是她嚐過最美味的朱古力蛋糕。

Mr & Mrs 404聽罷除了連番道謝外,其實很感動。

每次聽到客人「最美味朱古力蛋糕」、「難以忘懷的味道」、「家人讚不絕口」等説話,Mr & Mrs 404其實都很感動。

有人說,做飲食的人,或多或少都有一份異於常人的堅持。異常長的工時,年中無休的生活,相對不划算的回報,激烈的市場競爭,日以繼夜的勞損,的確,有心做飲食的人都有著一份固執的堅持,但堅持背後,無非就是為得到客人的欣賞和肯定。

所以,所有那些上百次的蛋糕實驗、長篇大論的介紹、詳細得不能再詳細的食法、厚著臉皮卻忍不住分享的story(笑)、重覆了無限次的食材介紹、甚至是通宵看YouTube學習food photography這種無聊事,説穿了,其實都是源於一顆渴望得到別人肯定的心。

也所以,每次收到好評、收到tag了404的post或story,我們才會如此感動,辛勞一掃而空,彷彿回到多年前大學「搏盡無悔」的時代(年輕人勿笑)。記得有次Mr & Mrs 404在私人Facebook的香港人飲食group看到有客人寫了上百字推薦404,還被人質疑是打手,弄得剛巧因工事吵架的我們都破涕為笑。

開店初期,Mrs 404經常感歎道:「如果有日我地做到所有鍾意食朱古力蛋糕嘅人,都覺得我地全香港最好食就好啦。」那時的我通常只會笑著輕輕回應了一句癡線。

但現在回想起來,我想跟Mrs 404鄭重收回那句癡線,並將「全香港」改做「全世界」。

「如果有日我地做到全香港鍾意食朱古力蛋糕嘅人,都覺得我地全世界最好食就好啦。」

被譽為「世界最美味朱古力蛋糕」,The 404 Bakery的Lisbon Chocolate Cake由3+1層組成。從底至高分別是:ABINAO 85%布朗尼餅、加入10年茶色波特酒(Tawny Port)的GUANAJA 70%朱古力醬、CARAÏBE 66% 傳統蛋奶醬式(Crème Anglaise-style)朱古力慕絲,及最上層的100%荷蘭式可可粉(dutched cocoa powder)。

🎊母親節安排:

早前母親節(9/5)加開的10個名額已全滿,現再加開最後5個Lisbon Chocolate Cake名額。客人如選擇前1-2天收蛋糕會較大機會購買得到。404的蛋糕全部可放雪櫃3-7日,味道保證不變,保存方式會於送蛋糕時提供。

工作室當日如常開放自取。運費和司機洽談後將不另收節日費用。港九新界均送貨,住宅地區一律送上門,餐廳或酒店亦會替客人事先送達並致電前台交代如何存放,方便製造驚喜。

由於查詢人數太多,回覆時間依舊需時1-2天,萬分抱歉。

【一年回顧】
近9000個IG followers、2次媒體訪問、3次公司活動、2次酒店及私人會所event、不下數十位foodie、model、藝人、作家、主播和KOL推薦、十數次商場和市集邀請(甚至有一次廣告公司合作,但礙於很多原因,抱歉都推掉了)、無數來自各行各業、不同國籍、年齡的客人的好評、鼓勵和支持。

以上一切,是您們每一位在過去一年帶給Mr & Mrs 404的。The 404 Bakery開業將近一年,沒靠廣告,沒靠人脈,沒靠運氣,連市集攤位都沒有擺過,就只靠三款蛋糕和您們每一位客人成長到今天這樣,説是奇蹟也不為過。所以我們常説thank you is too small a word,並不是客套說話,是真的。

接下來的一年,什麼pop-up store、新產品、品牌合作、業務擴展......説實話,在看到很多online shop積極拓展之際,Mr & Mrs 404確實未知自己的方向是什麼,但出這個一周年post,除了希望感謝大家,更重要的,是想用作提醒自己四個字---毋忘初衷。所以不論未來一年會是a year of uncertainties or possibilities,The 404 Bakery承諾味道不變,態度不變,初心不變。如果有一天我們忘了遵守承諾,懇請大家提醒我們,因為我們都明白在這個quick money比一切重要的世代,這個黑白顛倒的時勢,這個面目全非的家,要找到一樣事物保持不變,實在太難了。

最後想説,謝謝您們令Mr & Mrs 404還能感受得到這城市僅殘存下來,卻最可愛的地方。
