I’m currently creating a perimenopause programme with a practical 28-day meal plan - simple, nourishing meals made for real life.
Meals that are rich in plant protein, fibre and iron-containing ingredients, but still easy to prepare when you don’t have much time or energy.
Yesterday, while working on the programme layout, I inspired myself to cook one of the recipes.
The original version uses lentils, but I made it with Brazilian beans instead.
I added my PureKtchn Spices Mix, water, and cooked everything in the pressure cooker.
No chopping. No complicated steps. Just simple pantry ingredients turned into a proper comforting meal.
Served with mashed potato - and it was so good.
This is exactly the kind of food I want in the programme: practical, nourishing and easy to come back to.
