Seasonal Salad (Spring)

Mixed Japanese and Cornish leaves from our organic suppliers, wild fennel leaves, mugwort, yarrow and other wild herbs from Namayasai
Fresh peas, sheep’s feta, pickled asparagus, carosello cucumber, dressed with fig leaf olive oil and blackcurrant wood vinegar which is our new favourite :)

Ground ivy with little blue flowers, wood sorrel and their flowers, wild garlic with flowers, ricotta cream made with pine shoots - all from Namayasai.
Spinach gifted from Farmacy Farm.

Thought it was worth keeping a memory of this little water ~ garden plate before we move on to full summer menu :)

Pine pollen is a nutrient-dense phytotherapeutic powder derived from the young male cones (catkins) of pine trees, particularly Pinus massoniana.
Celebrated for its comprehensive nutritional profile which spans an array of vitamins, minerals, amino acids, enzymes and antioxidants, pine pollen is a natural source of phytoandrogens, plant-based compounds (phytosterols) that share similarities with certain androgenic hormones, including androstenedione, androsterone, dehydroepiandrosterone (DHEA), and testosterone.
In addition to their roles in hormone production, cell signaling and cell membrane organization, plant sterols may have a cellular antioxidant effect, and have been shown to reduce blood lipids and LDL-cholestrol.
This distinctive combination of functional nutrients and androgenic phytosterols makes this golden powder a unique botanical for supporting hormonal health and balance.

The pollen is harvested during only a couple of days in spring when the cones have opened up ready for the release. The frame for the harvest can be as little as one single day, should it be windy. We have been lucky to obtain a few of these golden cones from Namayasai, and are supplementing them with Wild Mountain Pollen from Navi, who work closely with skilled local villagers who have foraged wild Pine Pollen for generations, drawing on their expertise to ensure only the finest pollen is collected. The pollen is harvested exclusively from the Masson Pine growing in the foothills of the Himalayas, far away from pollution.
After harvesting, a low-temperature, high speed airflow process is used to break up about 99% of the cellular material, to crack open the cell wall and increase bio-availability.
By partnering directly with the local communities in Yunnan, sustainable harvesting practices are upheld hand in hand with the economic well-being of the local villages.

So - limited edition for now- little golden nuggets of nutrients are available on the counter today
