this was taken so long ago i’m not even 100% sure what this cake was 🥲 i THINK it was roasted plum, almond, and olive oil 🍑
popping in to wish everyone a merry christmas (if you celebrate it) and all the best for 2023!
i’ve mentioned that i have health problems previously, and unfortunately i haven’t been able to bake or post here as i’ve been in hospital for the last couple of months and most likely will be here a while longer. i’ll be back as soon as i can be! thank you all for sticking around 🧡

a cake for ukraine; almond and olive oil cake, noyaux soak (from the roasted apricot syrup), fig leaf vanilla creme diplomat, slow roasted apricots, noyaux apricot jam, salted vanilla swiss 🍑
have a teeny bit more tweaking to do on the sponge part on this cake, but i’m adding to the updated menu (which i’ve been promising for months but it’s neaaaarly done now, i promise!)
driving with cakes is STRESSFUL but she survived 🍰

citrus roasted apricots suspended in olive oil cake from the talented for this week. i’ve been subscribed to nicola’s incredible newsletter since the first one went out nearly 2 years ago now and she never ever disappoints! thank you for providing the incredible writing, recipes, research, and baking science for me to geek out on every sunday morning.

wagon wheels basking in golden hour 🌞
two buttery sables filled with homemade raspberry jam and vanilla bean marshmallow, dipped in dark chocolate and finished with freeze dried raspberries 💗
I’ve been busy doing a lot of planning, a lot of baking, but not much instagramming. However, now that instagram seem to finally have got the hint that we actually want to see posts from the people we follow and don’t care about reels, I’ll be here more often 🤞🏼

little 6” sticky toffee pud cake (layers of sticky toffee & date cake made with squishy medjool dates, steeped in salted molasses caramel, filled with vanilla creme legere, more caramel, and wrapped up in brown butter swiss) for a summer birthday 🌞
very happy to be baking again! i’m still sorting myself out and trying to update menus but orders can be made via dm or email as usual

i have a few squares of these going spare, they’re £5 for 6 - just drop me a dm or an email if you want to grab them (collection only today)
after a long 4 months without my beloved kitchenaid, I’m home and hoping to slowly ease back into taking orders again 🥹

jammy strawberry jewels (a la ) & toasted fig leaf vanilla infused syrup for a japanese inspired strawberry shortcake 🍰
(olive oil chiffon, fig leaf vanilla syrup, jammy strawbs, salty creme fraiche whip, vanilla bean chantilly)
fig leaf is my new obsession (smells SO GOOD - coconutty vanilla-y malt-y aroma) and i will probably be infusing it into anything and everything for the rest of the summer thank you and goodnight

confession: I baked these blondies a couple of weeks ago but they fit perfectly with this week’s theme of almonds, so thought I’d pop them here now as I’m temporarily out of action in hospital (but hopefully I’ll be back soon!)
this is homemade black cherry preserves and frangipane swirled through a beurre noisette almond blondie 🌰 🍒

salty deep roast peanut butter swiss meringue swoopy swoops on dark choc cake brushed with muscovado espresso soak and sea salt peanut brittle 🥜
a birthday cake for a thirteen year old boy with just the one direction for the brief - NO flowers.
I can see why a teenage boy doesn’t want flowers or frilly bits on a cake but I felt a little out of my comfort zone - I may be a little guilty of hiding behind petals and piping nozzles. However, I actually really enjoyed this one and it might be one of my favourite cakes so far? Push yourselves, kids ✌🏼
