Yesterday evening we had a lovely dinner with friends and of course I took a dessert! This super easy Lemon tart can be made in no time at all.
As I'm sure you will all agree making puff pastry is something that I haven't got the time or the inclination to do so I always use ready made pastry. (SHOCK HORROR) Quite frankly I would rather do my ironing than making pastry.
1 pack of ready roll pastry
1 tin of Condensed milk
3 egg yolks
4 lemons (unwaxed)
🍋 Blind back your pastry case at 180 degrees until it's golden.
🍋Mix the condensed milk with the 3 egg yolks and add the juice and zest from all 4 lemons and stir.
🍋Pour into the pastry case and bake for 20 mins on 180 (fan oven, yours may vary).
🍋Leave to cool and chill for a couple of hours before serving.
Simples ! Probably one of the easiest desserts I've made. Gorgeous and zingy and a lovely change from heavy puddings. X###
