A vegan cake can look perfect on the outside and still have structural problems.
A soft cake is lovely, but when you're stacking, filling or creating a celebration cake, softness alone isn't enough.
The cake underneath needs to have the right balance of tenderness and structure for the job you're asking it to do.
That's something I always think about when developing and refining my vegan cake recipes. All my cakes are structurally sound for stacking purposes.
Especially worth considering if you're baking celebration or wedding cakes for a customer.
