Busy day of baking today in preparation for tomorrows . Saturday 9th May between 9:00 -12:30.

I've made Pistachio tiffin, lemon and blueberry cake, rhubarb and crumble cake and Kinder Beuno cookies. I have also made some brunch bars, mango with passion fruit glaze cake, key lime pie bars and Eton Mess Swiss roll. Something for everyone !

Bakewell Tart

You don't have to have a traditional cake for a birthday celebration. Last week I was asked to make a bakewell tart and why not!
A shortcrust pastry shell filled with a layer of raspberry jam and frangipane and topped with flaked almonds and a drizzle of icing for a final flourish.
Perfect with a cuppa or served with cream or custard, your choice.

Cupcakes.

I got carried away with the sunshine last week and went all summery with my cupcakes for the Horsforth Farmers market. Two tone swirls and topped with sweets, what more could a big kid like me ask for. I think they'd be great for a summer celebration.

Decorating for me is the fun part but the cupcake itself is also important.

I use a recipe from for my vanilla cupcakes, for 2 reasons; they stay perfectly moist for much longer than most other cupcake recipes I've tried and they come out of the oven perfectly shaped. Which means I can get on with making pretty patterns on my cupcakes quicker😆

Strawberries and Cream Cake

A Classic Victoria Sponge cake with a thick filling of strawberry jam, fresh cream and strawberries and topped with another layer of whipped cream and more strawberries. Quintessentially British and great for any occasion. Cake topper was from , great service and will definitely order from you again- thank you.

The cake was ordered with an Afternoon Tea for 4 people - these are becoming one of my favourite things to put together. Totally bespoke- this one included a selection of sandwiches and sausage rolls. The traditional fruit scones with clotted cream and strawberry jam. My individual lemon and raspberry mousse layer cakes and finally some brownie bites.
Prices for afternoon tea are around £20 per person ( can vary depending on which desserts and how many are ordered)
Discounts are available for larger size parties ( over 10).

Fox cake.
So as you can see my lovely customers have been really testing me this week with a range of different cake designs. This one was a bit cuter than the last!
3 layers of fluffy vanilla sponge and buttercream under the fondant exterior and my go to- swiss meringue buttercream for the piped flowers on top.

Raw meat cake.
So when I was asked if I could produce a cake for a butchers retirement my first reaction was... not sure to be honest. Not my usual type of cakes I make but then I thought why not- I like a challenge. So glad I did, I had so much fun making it and proud of my first attempt doing anything remotely like this.
Everything is edible from the chocolate meat cleaver, to the rice krispie treat sausages, the steak cake and the wooden board cake.
