Breast Cancer Awareness. When your husband asks you to bake for a good cause of course I’m going to say yes. Even if he asked me 2 weeks on the bounce because he got the wrong date the 1st time around 🤪

Just had a lovely weekend weekend with my parents, celebrating my mums 85th birthday. Of course a birthday cake was required for the special occasion. I wanted to try out the chocolate and whipped caramel in a traditional round cake, rather than the slab cake I'd made previously. (Thanks again for the recipe- ) Turned out pretty good- the testing part was carrying it on the train with my luggage and Max (our dog). , ,

Whipped Caramel Chocolate Cake.
I often wonder if the bakes that go viral are really worth the hype, and thanks to who kindly posted his recipe, we can actually try his viral cake at home.
Verdict- it is very, very good. Can see why it sold out everywhere it was on the menu.
The whipped salted caramel is a game changer, definitely use this idea again.

If you wated to try my attempt at the cake, Ill be at tomorrow 12th September between 9:00-12:30. At the Headingley Country Markets stall. This is just one of many of my bakes available, hope to see you there.

Coffee and Chocolate Entremet

Wanted to make this for a while and my husbands birthday was the perfect excuse.

Maybe got a bit excited with all the layers but they all worked together to make one yummy dessert.
Started with a coffee sponge, followed by a crunchy hazelnut layer, next comes the indulgent coffee cremeux, a coffee mousse all encased in the silkiest chocolate mousse,. Finally a dark chocolate glaze ( made correctly this time 😉)

Indulgent- yes
Delicious- yes
Best part- really light so you can eat more.

😭posting a fail.
Not every day can be your day but I wont make this mistake again.

At the weekend I made a Strawberry Matcha Entremet- Super excited about trying a new flavour combination. Never cooked with matcha before and wanted to see if I could get the bold earthiness of matcha to balance with the sweet strawberries.
I made a super light matcha sponge, layered with a strawberry curd, fresh strawberries and encased with a matcha mousse. All good so far.
Then I came to make my super shiny glaze, and I somehow forgot to add the gelatine.
Basically it meant that the glaze slid right off the cake- and by the time I realised there was nothing I could do apart from watch. I didn't have the ingredients or the time to redo so unfortunately my nephew was left with an unglazed cake. Super disappointed but I'll just have to redeem myself next time.🤞
