Coffee and Chocolate Entremet

Wanted to make this for a while and my husbands birthday was the perfect excuse.

Maybe got a bit excited with all the layers but they all worked together to make one yummy dessert.
Started with a coffee sponge, followed by a crunchy hazelnut layer, next comes the indulgent coffee cremeux, a coffee mousse all encased in the silkiest chocolate mousse,. Finally a dark chocolate glaze ( made correctly this time 😉)

Indulgent- yes
Delicious- yes
Best part- really light so you can eat more.

😭posting a fail.
Not every day can be your day but I wont make this mistake again.

At the weekend I made a Strawberry Matcha Entremet- Super excited about trying a new flavour combination. Never cooked with matcha before and wanted to see if I could get the bold earthiness of matcha to balance with the sweet strawberries.
I made a super light matcha sponge, layered with a strawberry curd, fresh strawberries and encased with a matcha mousse. All good so far.
Then I came to make my super shiny glaze, and I somehow forgot to add the gelatine.
Basically it meant that the glaze slid right off the cake- and by the time I realised there was nothing I could do apart from watch. I didn't have the ingredients or the time to redo so unfortunately my nephew was left with an unglazed cake. Super disappointed but I'll just have to redeem myself next time.🤞

Blueberry Custard Crumble Buns. A brioche bun filled with custard, homemade blueberry jam and topped with fresh blueberries. Simply yum.

So it's Emily's last day of primary school 🥲and as a thank you she wanted me to make the sweetest cupcakes. All custom made with things that she thinks her teacher likes. I thought it was such a thoughtful thing to do, I could hardly say no!
Really pleased with how they turned out.

Happy 15th Birthday Sophie xx

Every year my daughters get to choose what birthday cake they would like, only proviso being that you can't have the same cake flavour/design twice.
This year Sophie requested a passion fruit cake with a hand made hibiscus flower on top (okay so I have never made sugar paste flowers before but I gave it a go)

Inside we have a vanilla cake layered with a passion fruit curd and I added a layer of mango compote for a sweet balance, all surrounded with passion fruit ganache which is super light and airy and oozes summer ( even if the weather outside doesn't quite feel the same)

I've made Pistachio tiffin, lemon and blueberry cake, rhubarb and crumble cake and Kinder Beuno cookies. I have also made some brunch bars, mango with passion fruit glaze cake, key lime pie bars and Eton Mess Swiss roll. Something for everyone !
