Well, it’s certainly been a long time hasn’t it!!! I’m officially back from an 8 month hiatus! I shall be making a post on that soon with what I’ve been doing!

But here is my first dish back, Ode to Honey. It’s loosely based around a Crunchie chocolate bar with the flavours and some of the textures.

The dish comprises of a spiced honey cake, topped with chocolate mousse and brandy snap. Served with chunks of honeycomb, honeycomb ice cream and “Crunchie” macarons (macarons with chocolate ganache filling and pieces of chocolate covered honeycomb)

Last bake to see this crazy year out, and thought I’d make something I’ve always wanted to but never done it because I was scared too, and that’s marshmallows! And unlike most of 2020 they actually turned out amazing! 2020 has been such a mad year but I’m so excited for what next year holds!!

Professional plate! Haven’t done one of these in a long time but managed to create this one a couple days ago!

This is my take on the flavours of a Black Forest Gateau! It includes a cherry mousse, Chantilly cream, chocolate soil, set chocolate ganache and some chocolate genoise soaked in kirsch syrup, finished with some cherries and mint.

We are back open!! Shop is now open and there’s a few new items! Firstly, there are gluten and dairy free versions of the shortbread and chocolate cookies, with more to come! Furthermore, there will be a couple new tins coming at the end of the day, chocolate banana cake and ginger sponge!!
